Are you into canning? I love it! I have canned jam, pickles, and salsa in the summer and have given them away as food gifts at Christmas time. You can store your canned goods for 1 year, so now is the perfect time to can your favorites. By the way, my Mixed Berry Jam is awesome if you’re looking for a good recipe!
You Can CAN is a great book! It’s loaded with beautiful pictures and step-by-step tutorials on canning.

The directions are clear and concise.

Different methods of preserving foods are explained, along with many photos of tools and equipment.

There are lots of handy charts. This one tells you how to prepare, can, and freeze your vegetables.

This picture (from the book) is Chunky Homemade Salsa on page 120. I tried this recipe so I could have some salsa on hand for our holiday parties.
Here are a few pictures of how I made the salsa!

I started with 7 lbs. of plum tomatoes.

I chopped the tomatoes and drained them for 30 minutes.

I cooked the tomatoes for an hour.

I added the chile peppers, onions, vinegar, parsley, tomato paste, sugar, salt, black pepper, and garlic. Then I cooked it for 10 more minutes.

I processed the jars in boiling water (as directed) with the lid on.

And this is how they came out! The recipe made 5 pints. It’s very good! It’s a little too spicy for me, but my husband and some of my family members will love it that way! I won’t put as many chile peppers in it next time.

I have never canned in my life, but am wanting to learn. I’ve watched my grandmother can everything under the sun (vegetables, jams, etc.) and my mother can spaghetti sauce, tomatoes, and chicken soup. I want to can tomatoes and spaghetti sauces especially, but also am interested in fruits, beans, and eventually jams and jellies. Anything to help build up a stash for my family.

When I was growing my parents always planned a big vegetable garden in the summer then watermelon and cantaloups later. We always had plenty of plum, peach and apple trees and lots of grape vines. I remember after school we would pick vegetables out of the garden and my mother would can string beans, stewed tomatoes, bread and butter pickles, tomato relish, squash, jams, apple butter and jellies. In the winer time we had plenty of canned vegeables and fruit to eat. My mother would can all summer long but unfortunaely I never wanted to learn how to can. As I’ve gotten older I want to learn how to can especially grape jelly, I love it so much. Funny how time changes your thinking.

My mom and grandmother and I used to make strawberry jelly together when i was a kid but we made freezer jelly…. i’ve never canned before but i would love to learn how (especially since we are looking for a house with more land so i can finally have a garden) and this book looks great to use to learn…. i think my first thing id like to can is jellies… and pickles… mmmmmmm

I can many things from our garden salsa, spaghetti sauce, tomato juice, greeen beans, pickles, relish, apple pie filling, applesauce, apple butter, & anything else I can get my hands on!

I teach Family Consumer Science at the the high school level, last year we had access to the towns community garden, so I taught the students how to can-we did salsa, spaghetti sauce and carrot cake jam. The kids loved what we did-the canned items were then given back to the needy families in the community!!

I have canned some cowboy candy. That was my first adventure in canning. I want to be able to can everything! My hubby and I have plans to can again this weekend!
I follow you on facebook and saw this book give away - I would love any help that I can get in this area. I have been gardening for about two years now and this is the first year that I have tried canning. So far I have a pretty decent recipe for lime pickles and a recipe for garlic refrigerator pickles - so far 15 quarts! Now I have to figure out what to do with all my tomatoes!
