I never had red velvet cake growing up. I don’t know…maybe it’s not as popular in New England. I often wondered what it tastes like. Well now, in my forties, I can proudly say I’ve tried it, I’ve made it, and I love it! Did you grow up eating Red Velvet Cake?
I got the idea to make heart-shaped Red Velvet Whoopie Pies after browsing the Wilton products at my local Michael’s store. The Wilton aisle always gives me ideas and inspiration! I could spend a week in that aisle if they let me!
I added 2 tablespoons of batter to each heart, pressing down the batter to fill in the heart shape.
They came out pretty thick, so I decided to cut them in half. A long serrated knife works best.
I filled my pastry bag with the filling and used a #32 decorating tip to fill the whoopie pies. Trust me, it’s faster, neater, and easier than using a knife.
Here are my first Red Velvet Whoopie Pies! They are S-O G-O-O-D! I will definitely make them again!

Red Velvet Heart-Shaped Whoopie Pies
Ingredients
2 cups flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup salted butter, softened
1 cup light brown sugar, packed
1 egg
1 teaspoon vanilla extract
1/2 cup buttermilk
.3 fl. oz. bottle red food coloring
Filling:
12 tablespoons unsalted butter, softened
1 1/4 cups confectioner’s sugar (measure, then sift to remove any lumps)
1 1/2 teaspoons vanilla extract
pinch of salt
2 1/2 cups Marshmallow Fluff
Directions
1. Preheat the oven to 375°F. Spray the heart shaped pans with nonstick spray and set aside.
2. In a medium bowl, combine the flour, cocoa powder, baking soda, and salt; set aside.
3. In a large mixing bowl, beat the butter and brown sugar together until fluffy. Add the egg and vanilla and mix until blended. Alternately add flour mixture and buttermilk, beating after each addition. Add all of the food coloring and mix until well blended. (You can certainly add more food coloring if you want them more red.)
4. Place 2 tablespoons of batter into each heart and flatten slightly so the batter takes the shape of the heart.
5. Bake for 7 - 8 minutes or until the cake springs back when tapped. Transfer to a cooling rack and cool completely before cutting in half.
To make the filling:
6. In a large mixing bowl, beat the butter until smooth. Slowly add the confectioner’s sugar, vanilla, salt, and marshmallow until blended.
7. To assemble the whoopie pie, cut each cake in half, add the filling to one half, and top with the other half.
*I forgot to write down how many whoopie pies I made with this recipe. I think there were around 20.

I grew up in New England too and have STILL never tried red velvet cake. I never even heard of it until I saw Steel Magnolias and saw the red velvet armadillo cake. Even then, I didn’t understand what it was. Maybe someday I’ll try it! Those look good!

Oh I love these! And, the reason you probably never had a Red Velvet Cake growing up in New England is because it is a well loved southern cake! I absolutely grew up with it - it’s a pretty classic cake made at Christmas in the south and just the thought of it brings my mama and her cake to my mind.

WOW Jane - I’m so impressed! Your whoopie pies look perfect! My mom made red velvet cake from scratch when I was a kid - the frosting was made with crisco and flour - sounds horrible but it’s awesome! I don’t have a Michael’s locally, but you can bet when I get near one I’ll be heading for the Wilton aisle. Oh yum!! Red Velvet has been my favorite since I was a kid. There was a bakery in my hometown that made the best RV cake. Sadly, they recently shut down. I have never actually made one myself…but my daughter and a couple of her friends made some over the Christmas break and it was yummy.

I used the whole bottle of .3 fl. oz. red food coloring. Some recipes use 1 oz. My whoopie pies were not very red so you probably want to add more than I did.

Do you think these could be made ahead? I need to bring a cake to a party on a Tuesday and my Monday is booked solid. Could I make them on the Sunday? They look perfect for the occasion!

Hi Hilary,
They’re moist, so I think the red velvet cakes would be fine in 2 days as long as they are covered and refrigerated. If you can make the cakes and frosting on Sunday and frost them on Tuesday, that would probably taste better. It wouldn’t take long to frost them, especially if you use a pastry bag (as shown above). Enjoy!
