I use a fair amount of eggs, especially during the holiday season!  During this time of year, my “go to” recipes are definitely sweet breads.  I make them for friends and co-workers right before Christmas.  Mini breads are great because you can make 3 or 4 at a time and pack them with other goodies in a pretty Christmas gift bag!  Here are a few of my favorite bread recipes!
 

Mini Gingerbread Raisin Loaves

(I use cellophane wrap or bags to dress them up.)

 

Sweet Potato Streusel Bread

 

Chocolate Banana Nut Bread

 

I received a coupon for a free dozen Land O’ Lakes eggs and made my simple Pancetta and Zucchini Quiche with them!  It was delicious!

 

 

Land O’ Lakes sells a variety of eggs and has a great recipe section on their website.  Be sure to check them out!

    Pumpkin bread and boiled custard are 2 things I always make. This year I have made enough cookies and different breads to feed my sons employees the day after Thanksgiving. All 160 + employees. (-: Boy is my freezer running over.

    My Mom’s Thanksgiving stuffing (that my dauther and I now make) has lots of eggs in it. It has both boiled and chopped and raw ones for binder that are cooked as the stuffing is cooked.

    I bake a bunch of cookies and depending on whether my husband is home or not (Army), I either send them with him to work, or I send them to him while he’s deployed. This year we are boxing up a bunch of cookies to send to Afghanistan for all the soldiers in his unit!

    Nothing says holidays like Pumpkin Pie-which calls for eggs. We also use eggs in the stuffing for the turkey. The other thing I like to do during the busy holiday season is make a breakfast casserole-which calls for eggs. It can be made the night before, refrigerated, then baked in the morning. Thanks for the giveaway.
