Summer is among us which means grilling season is in full swing, and my family loves trying new recipes on the grill. Our latest endeavor was grilling a Hatfield® Marinated Pork Loin Filet and turning it into one scrumptious pizza! I like using Hatfield® Marinated Pork Loin Filets because they’re simple to cook and they’re full of flavor due to the dry rub seasoning. Plus I know I’m always getting a good quality product from Hatfield® being that they are a family owned, american made company. There are no hormones or steroids added and it’s all natural too so I feel confident when I choose Hatfield® Quality Meats for my family!
My local Shop-n-Save has a lot of different flavors of the pork tenderloins as well as the pork filets. With these being seasoned, it makes it very convenient to whip up a delicious, easy meal for my family. This week we went with the Montreal Seasoned Dry Rubbed Pork Loin Filet, grabbed a few other ingredients and off we went.
All I had to do is take this out of the package, place it on the grill and cook until it was done. Once the Hatfield® Marinated Pork Loin Filet was done I let it rest a few minutes and then shred it up. We used ready-made pizza crusts and also prepped the other ingredients while the filet was grilling so dinner was done within a matter of minutes. This makes the perfect weeknight meal or the perfect take-along for any summer gathering with family and friends!
Ingredients
- 1 10-12" Ready-to-Bake Thin Pizza Crust
- 1/3 C Sauce (we used a smokey chipotle bbq)
- 1 C corn
- 1 Roma tomato, seeded and diced
- 2 Tbsp. red onion, diced
- 1 C black beans
- 1 Hatfield® Marinated Pork Loin Filet
- 1/4 tsp. cumin
- 1/8 tsp. salt
- 1 C Gouda Cheese, shredded
- 1/2 C mozzarella cheese, shredded
- 2 Tbsp. fresh cilantro, torn into pieces & divided
Instructions
- Heat the grill.
- Grill the Hatfield® Marinated Pork Loin Filet until and internal temperature of 145 degrees F; remove from grill and allow to rest.
- While the filet is grilling, mix the corn, tomato, onion, beans, cumin, salt and 1 Tbsp. cilantro together; set aside.
- Shred the Hatfield® Marinated Pork Loin Filet and mix into the corn mixture.
- Spread the sauce onto the crust.
- Sprinkle the cheeses onto the sauce so it's evenly covered.
- Spoon the vegetable/pork mixture evenly on top of the cheese.
- Place pizza onto heated grill and cook for 5-7 minutes; until cheese is melted.
- Remove pizza and sprinkle on the remaining 1 Tbsp. cilantro.
- Slice, serve and enjoy!
