A LONG time ago, I went to a public regional vocational high school and spent my high school years in their Early Childhood Development Program.  My second choice was Food/Culinary Trades.  (Hmmm…big surprise!)  After high school, I got a Bachelor and Master’s Degree in Early Childhood Education and have been teaching for 24 years.  (Yep, I’m that old!)  Well, I don’t regret the path I chose but I always had a strong passion for food and cooking.  I always tried out new recipes and loved to entertain.  During my teaching career, there were some very “trying times” and I often thought that if it were financially possible, I would have loved to stop working and go to a culinary school.  But it just wasn’t in the cards.  Which leads me to why I enjoy cookbooks like this one.

Essential Techniques and Recipes for Creating Great Food

I love all kinds of cookbooks, but I especially love books like this that teach you different techniques and have step-by-step pictures.  I’m all about trying something new when it comes to food.  I get a real kick out of making or trying a dish for the first time.  This kind of cookbook feeds my inner chef!

 

The Culinary Institute of America, founded in 1946, has earned it’s reputation as the world’s premier culinary college.  More than 2,000 students from across the country and around the world study at the CIA campus in Hyde Park, NY, and more than 6,000 food and wine professionals pursue continuing education programs each year at Hyde Park and at the CIA’s branch campus, Greystone, in California’s Napa Valley.  The CIA offers all of it’s students a high-quality professional education.

The chapters in this book include:  Soups, Poultry, Meat, Fish and Shellfish, Pasta, Vegetables, Potatoes, Grains, and Legumes, Eggs, Starters and Salads, and Kitchen Desserts.

One day last week, I was all by myself for dinner, so I made this Quiche Lorraine from the book.  I’m the only quiche fan in my house, so it was the perfect time to make it.  It was easy to make and very tasty!

    I would love to learn how to cook more soups! They are so Yummy and practical in winter months. Especially made in the crock-pot!

    I would love to learn how to make Beef ‘Wellington and a lot more things. I went to Vocational school for cooking…and this cookbook would be awesome to use in my kitchen now!

    I would love to learn to make any of the seafood dishes. My husband and son love seafood and I would really like to learn how to cook it properly for them!

    Wow Jane! We have such similar backgrounds. I went to college to study Child Development and got my Associates, wound up in a Day Care and it was just too stressful. As soon as I sell my Dad’s house….I’m off to culinary school! Small world isn’t it?

    I don’t know that there’s a specific dish I’d like to learn how to make, but I would love to learn how to use a knife. I’m useless when it comes to chopping and dicing. I’ve NEVER made uniform pieces.

    Jane, I have a similar situation! I started college as an Early Education major, however after two years it wasn’t my passion, so I changed my major to Culinary Arts and now have my degree :)

    Oh and I’d love to try the pizza recipe :)

    I love seafood and have made many seafood dishes but I know there are a lot of seafood dishes out there that I have not tried. I would love to know how to make more seafood dishes.

    I would love to learn the techniques for different types of pasta. My teenage son wants to attend the CIA and we have been playing around with his new pasta machine but could use more instruction!

    im a very adventurous cook and ive tried lots of things… one thing ive always wanted to do (especially after marrying an Italian man) is make pasta from scratch….

    I want to learn how to make the Margarita Pizza. We have bought a pizza stone and a peel for pizza making. We are trying to make pizza these days, and need some help that this book would provide.

    I could use learning to bake, cook most anything! lol! I have a pasta machine…never used it…so I would start there…love to learn to make pasta specifically my own stuffed pasta…like ravioli!!
