Oh my goodness! I wish you could have smelled my kitchen when this was in the oven! This is so moist and delicious! The streusel topping is amazing! I wanted to make a quick bread this weekend so I could try out my new Giada De Laurentis bread pan (below). Isn’t it nice? Target carries her line of products. I just might have to go back and check out the rest of her bakeware!
Apple Pie Bread
Ingredients
1/2 cup butter, softened
1 cup sugar
1/4 cup 1% milk
2 eggs
1 teaspoon vanilla extract
2 cups (peeled) shredded apples (I used 5 Macintosh)
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Streusel Topping
1/4 cup light brown sugar, packed
3 tablespoons flour
1/4 teaspoon cinnamon
1/2 cup walnuts, chopped
2 tablespoons cold butter
Directions
1. Preheat the oven to 350 degrees F. Spray a 9 x 5 bread pan with nonstick spray; set aside.
2. In a large mixing bowl, cream the butter and sugar together. Add the milk, eggs, vanilla, and apples and mix on low speed until smooth.
3. In a medium bowl, combine the flour, baking powder, salt, and cinnamon. Add the dry ingredients to the apple mixture on low speed until combined. Pour the batter into the prepared loaf pan and spread evenly.
4. In a small mixing bowl, combine the brown sugar, flour, and cinnamon on low speed. With the mixer on low speed, add little pieces of the butter and mix until blended. Add the walnuts and stir well. Sprinkle the streusel over the bread batter evenly.
5. Bake for 60 - 70 minutes (until a toothpick inserted in the center comes out clean). Let stand for 10 minutes. Then remove the bread from the pan and cool on a wire rack.
Make-Ahead Tip
This would be a great treat to keep in the freezer. All you need to do is thaw it out overnight and then you’ll have an instant dessert with no mess or fuss.
Freezing Directions
When the bread is completely cooled, wrap in plastic wrap and place it in a labeled freezer bag. Remove as much air as possible. I recommend using a vacuum sealed bag. Freeze up to 2 months.

I used the side of my grater box with the largest holes.
when i made this, i forgot to put the topping on the batter and the bread turned out dry and doughy. i entered the recipe into the fair and it’s headed to state so i need to know how to fix this ASAP!

does anyone know why the bread would turn out doughy on the bottom? i followed the directions up until the topping part b/c i forgot to put the topping on the batter. i used a glass pan instead because i couldn’t afford to buy the one from target. i’m hoping to win 1st prize at the state fair but i need to know where i went wrong. PLEASE HELP ME, ASAP!

If you make it again, make sure the temperature is correct, place it in the center of the oven, and check it with a tooth pick every 5 minutes toward the end of cooking time. Bake it until the toothpick (inserted in the center) comes out clean. This bread should come out moist. If you try it when it’s warm, it might seem doughy. Cool it completely before you eat it. Hope that helps!
After shredding the apples did you drain any of the liquid out or keep all the liquid with the fruit? Thank you.

I made this tonight and it was great EXCEPT it tasted nothing like apples! I used 2 cups of shredded apples as written and it was yummy and moist but not apple-y at all. You mention that 5 apples makes 2 cups for you, but I only needed 2 apples to make 2 cups. Could you actually be using more than 2 cups? Maybe that’s the problem! Very good, though! To make mini loaves, how long should they bake?

I’m not sure how long it will take for mini loaves. You’ll need to test them with a tooth pick periodically and remove them from the oven when the tooth pick comes out clean. Wish I could be more help.
This apple pie bread is delicious! I had to make a few substatuations. I was out of butter so I used, I can’t believe it’s not butter. And I didn’t have enough cinnamon so I used pumpkin pie spice.
I can’t wait to make it again with all the right ingredients, I’m sure it will be even better :}

I made this last night and it was heavy and pretty soggy. i inserted a tooth pick and it came out clean. It smelled good, but will toss. I am sure it was me not the recipe.
