Last week I tested out this new cookie recipe and was really happy with it. In fact, I brought a plateful to school and left them in the teacher’s lunch room and one of my teacher friends asked for the recipe!
These cookies are very moist and have just the right amount of sweetness. You can add chocolate chips or baking raisins but I think they’re flavorful enough without them! With 1 cup of shredded apple and 2 cups of oatmeal, you almost don’t feel guilty eating them!
Apple Oatmeal Cookies
Ingredients
3/4 cup butter, softened
1 cup sugar
1/2 cup light brown sugar, packed
1 teaspoon vanilla extract
2 large eggs
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups old-fashioned oatmeal
1 cup shredded apple, lightly packed (I used Cortland.)
1/2 cup walnuts, chopped
(optional)
1 1/4 cup semi-sweet chocolate morsels or 1 cup baking raisins
Directions
1. Preheat the oven to 350°F. Line a large cookie sheet with parchment paper and set aside.
2. In a large mixing bowl, cream the butter, sugar, and light brown sugar until smooth. Add the vanilla and eggs and beat until blended.
3. In a medium bowl, combine the flour, baking soda, cinnamon, salt, and oatmeal. Add this to the creamed mixture on low speed until combined. Add the apple, chocolate chips, and walnuts on low speed.
4. Place rounded tablespoons of dough two inches apart on the sheet pan. Bake for 12 minutes. The centers will be soft and the edges should be golden brown. Test the centers with a tooth pick. It should come out clean or with a few moist crumbs attached.
This recipe makes about 54 cookies.

These cookies were very good, but we had a hard time eating them because they would not hold together. They were all gobbled up so no real problem, just trying to figure out how to make them more portable the next time I make them.

Not sure what happened to your cookies. Mine held together fine. Did you use 1 and 3/4 cups of flour?

This recipe looks delicious. I likethat it has walnuts in it too, because it will add a nice taste (and crunchyness) to the cookies.

I’m so excited about this cookie! My hubby loves oatmeal raisin, and I haven’t yet found a recipe that was ‘just right’….til I made these today. LOVE it with the apple. I reduced the sugar and added more flour for a thicker cookie - we are really enjoying them. So glad I saw this…and can’t help but figure they’re a ‘healthier’ version. XO
