Tilapia with Pecan Brown Butter from Real Simple Month of Dinners

Last year, I participated in Real Simple’s Take Back Dinner program.  This month, Real Simple has asked me to participate in a Stress-Free Month of Dinners.  It’s a blogger relay where 20 bloggers will cook one of the recipes from the delicious list of Real Simple Stress-Free Month of Dinners.

I chose the to blog about the Tilapia with Pecan Brown Butter for many reasons.  First, I’ve eaten tilapia in restaurants, but I never cooked it myself at home.  Second, I haven’t made too many dishes with brown butter, so I wanted to try that method of cooking.  And third, the recipe looked easy and delicious!

Here’s how to make the dinner.

First, cook the wild rice according to the package directions. (I didn’t take pictures of that.)

Cook the butter in a small saucepan over medium heat until foamy, 1 to 2 minutes. Stir in the pecans and cook, stirring, until the butter is golden brown, 2 to 3 minutes. Stir in the parsley, lemon juice, and ¼ teaspoon each salt and pepper. Keep warm.

 

Heat the oil in a large nonstick skillet over medium-high heat. Season the tilapia with ½ teaspoon salt and ¼ teaspoon pepper. In 2 batches, cook until opaque throughout, 2 to 3 minutes per side.

 

I had a hard time finding some good green beans, so I made one of our favorite, quick vegetable dishes.  I sautéed a bag of sugar snap peas in a little olive oil and seasoned them with salt, ground black pepper, and red pepper flakes.

 

This is how the meal turned out!  Dave and I enjoyed it and it really was quick to make!

    Hmmmm - I wonder if my boys would eat this? I love sugar snap peas & I think that they must have been the perfect side for this dish.
