Zesty Seafood Chowder
Zesty Seafood Chowder
Serves 6
This robust chowder is a lip-smacking meal-in-a-bowl. I love the hint of smokiness balanced by the heat of the jalapeño.
Medium to large (31⁄2 to 5 quart) slow cooker
4 oz smoked bacon, diced
2 leeks, white part with just a hint of green,
thinly sliced
2 stalks celery, diced
2 cloves garlic, minced
1 tsp Cajun seasoning
1 tsp dried thyme
1 tsp salt
1⁄2 tsp cracked black peppercorns
2 tbsp all-purpose flour
1 cup dry white wine (see Tips, left)
2 cups fish broth or 1 cup (250 mL) each bottled
clam juice and water
2 potatoes, peeled and diced
3 lbs small clams, cleaned (see Tips, left)
1 lb firm white fish fillets, such as Pacific halibut or
haddock, cut into 1-inch (2.5 cm) cubes
1 cup corn kernels, thawed if frozen
1 to 2 jalapeño peppers, seeded and diced
1 cup heavy or whipping (35%) cream
Finely chopped Italian flat-leaf parsley
1. In a skillet, cook bacon over medium-high heat until crisp. Drain well on paper towel. Cover and refrigerate until ready to use.
2. Reduce heat to medium. Add leeks and celery to pan and cook, stirring, until softened, about 5 minutes. Add garlic, Cajun seasoning, thyme, salt and peppercorns and cook, stirring, for 1 minute. Add flour and cook, stirring, for 1 minute. Add wine, bring to a boil and boil for 2 minutes.
3. Transfer to slow cooker stoneware. Stir in fish broth and potatoes. Cover and cook on Low for 8 hours or on High for 4 hours, until potatoes are tender.
4. Discard any clams that are open. In a large saucepan over medium-high heat, bring 1 cup (250 mL) water to a rapid boil. Add clams, cover and cook, shaking the pot, until all the clams open. Discard any that do not open. Strain cooking liquid through a fine sieve into a bowl. Using a fork, remove clam meat from shells. Add clam cooking liquid and meat to slow cooker, along with fish fillets, reserved bacon, corn, jalapeño to taste and cream. Cover and cook on High for 10 minutes, until fish is cooked through and flavors meld. Ladle soup into bowls and garnish with parsley.

Tips
If you are halving this recipe, be sure to use a small (2 to 3 quart) slow cooker.
If you prefer, substitute an extra cup (250 mL) of water plus 1 tbsp (15 mL) lemon juice for the white wine.
To clean clams: Scrub clams thoroughly with a wire brush and soak in several changes of cold salted water.
Substitute 2 cans (each 5 oz/142 g) baby clams, drained, for the fresh. Add to slow cooker along with the fish and include 1 cup (250 mL) of water.
Make Ahead
Complete Steps 1 and 2. Cover and refrigerate bacon and vegetable mixture separately for up to 2 days. When you’re ready to cook, continue with the recipe.

Just Peachy Gingerbread Upside-Down Cake
Just Peachy Gingerbread Upside-Down Cake
Serves 10 to 12
The deliciously rich molasses-flavored gingerbread, topped with peaches in caramel, is an absolutely irresistible combination. Serve it with a big scoop of vanilla ice cream and savor every bite.
Large (approx. 5 quart) oval slow cooker, lightly greased
1⁄4 cup melted butter
1⁄2 cup packed brown sugar
2 cans (each 14 oz/398 mL) sliced peaches,
drained, or 4 cups (1 L) sliced peeled peaches
Cake
2 cups all-purpose flour
2 tsp baking soda
1⁄2 tsp salt
1 tbsp ground ginger
1 tsp ground cinnamon
1⁄2 cup molasses
1⁄2 cup boiling water
1⁄2 cup butter, softened
1 cup packed brown sugar
1 egg
Vanilla ice cream, optional
1. In a small bowl, combine butter and brown sugar. Spread over bottom of prepared slow cooker stoneware. Arrange peaches on top.
2. Cake: In a bowl, mix together flour, baking soda, salt, ginger and cinnamon. In a separate bowl, combine molasses and boiling water. In a bowl, using an electric mixer, if desired, beat butter and brown sugar until smooth and creamy. Beat in egg until incorporated. Add flour mixture alternately with molasses mixture, beating well after each addition. Pour batter over peaches.
3. Place a clean tea towel over top of slow cooker stoneware (see Tip, left). Cover and cook on High for 21⁄2 to 3 hours or until a toothpick inserted in center of cake comes out clean. When ready to serve, slice and invert onto plate. Top with vanilla ice cream, if using.
Variation
Apple Gingerbread Upside-Down Cake: Substitute 4 cups (1 L) chopped peeled apples for the peaches.

Tip
To prevent accumulated moisture from dripping on the cake batter, place a clean tea towel, folded in half (so you will have two layers), across the top of the stoneware before covering. The towel will absorb the moisture generated during cooking.

I never made chicken and dumplings in my slow cooker before, so I tried out the Chicken ‘n’ Dumplings on page 170. I really liked it! It’s a great recipe for this time of year!
This cookbook has nearly 300 pages with many gorgeous photos. It has every recipe you can imagine. The recipes are not complicated and use every day ingredients found in your kitchen. I love the additional “Make Ahead” feature on many of the recipes! There are helpful Tips that go with each recipe and it indicates if the recipe can be halved. This cookbook is going to get a lot of use in my house. I highly recommend it!

I love making soups during the winter (chicken, taco, vegetable beef). I’m wanting to find a good broccoli and cheese soup as well as a loaded baked potato soup recipe. I’m also going to try making my calico beans in the crock pot. It’s normally a baked bean casserole.
I am looking forward to making Hungarian Beef this winter. It cooks for 8 hours and the house always smells amazing. I love serving it over buttered egg noodles and homemade applesauce. Ohhhhh the perfect meal!
I’d can’t wait to make pot roast and I’d love to make the chicken ‘n dumplings recipe in the book. I look forward to using my crockpot more this year. In fact, I’m trying to figure out what crockpot to purchase. The one I have now is over 20 years old and not big enough for my family of four.
I love to make vegetable soup in my slow cooker. And I’m going to try desserts in it this year - the Peachy Gingerbread one mentioned above sounds great 😉

Hey!!! I have so many recipes that I can’t choose. I love to just throw things in the slow cooker and see what I get. Two of my favorites: Pot Roast with carrots, potatoes, and a little onion; Beef Vegetable soup which is basically tomato juice, mixed vegs and stew meat and I change up the add ins…potatoes, bell peppers, broccoli, a little pasta added at the end of the cooking, rice. I really don’t write down my recipes, maybe I should.
I am looking forward to soup reciepes and sweets - never really knew you could do sweets in the crockpot!
One of my favorite slow cooker recipes is a creamy, herbed chicken thigh dish. It’s great over noodles or rice.
