Happy Cinco de Mayo! How about Tex-Mex Wood Fired Pizza to enjoy today, or even Oven Nachos. Mexican food is my favorite, and I honestly cannot get enough of it. My husband isn’t a fan like me so I don’t make it as often as I’d like. However, making a Mexican Pizza in a wood fired oven definitely peeks his interest. If you’d prefer, you can toss this onto the grill and get the same result. Either way, this is a delicious pizza to enjoy using my make-ahead Marinara sauce and 5-minute Pizza dough.
Tex-Mex Pizza

Ingredients
- Dough
- Marinara Sauce
- 1/2 tsp chili powder
- 1/2 tsp cumin powder
- Handful of grated cheddar, or shredded mozzarella
- 1/2 of a small red onion, sliced into rings
- 1/4 C of canned beans
- 1 small avocado, sliced
- lettuce, finely chopped
- salt/pepper
Instructions
- First, light up your Uuni or whatever wood fired pizza oven you own, or even the grill.
- Next, flour your pizza peel and spread the classic dough over the top into a pizza base shape.
- Spread a couple of spoons of marinara sauce over the base.
- Sprinkle the chili powder and cumin over the top.
- Sprinkle on the cheese, the chopped onion and beans.
- Using the peel, slide the pizza into the oven and allow to cook for 2-3 minutes.
- Remove from the heat and cover the centre of the pizza with a bed of chopped lettuce, and some avocado slices.
- Season to taste.
