Mornings can be busy, but that doesn’t mean you have to skip breakfast. Once you try this Strawberry, Blueberry and Cream Baked Oatmeal you’ll never miss out again! You can make it with whatever fruit you prefer, but there’s something about the combination of strawberries and blueberries that go together perfectly. Plus once you add the cream on top it becomes a decadent breakfast that everyone will love. I prepare this the night before, place in the fridge and then bake it in the morning. Then even if it’s a busy morning, I know the kids have a warm, nutritious and delicious breakfast that will keep their bellies full!
- 2 C rolled oats
- 1/3 C brown sugar
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 Tbsp. vanilla
- 2 1/2 C milk
- 1/2 C real cream
- sliced strawberries
- blueberries
- Mix the oats, brown sugar, baking powder, cinnamon and salt together.
- Pour the milk and vanilla into the dry ingredients and mix well.
- Grease an 8 x8" pan; pour the mixture into the pan.
- Stir some sliced strawberries and blueberries into the oatmeal mixture.
- Bake at 350 degrees for 15-20 minutes; until golden brown around the edges.
- Remove from oven and drizzle on the cream.
- Serve and enjoy!
- You don't have to prepare this overnight. You can mix this up in the morning, toss it in the oven, but you'll need to bake an additional 5-10 minutes.
