Whenever I talk about make-ahead meals, I tell people about my #1 go-to recipe…Sloppy Joes. This recipe is in my cookbook and it’s one of our favorites. You can cook it and freeze it in different size portions to fit your family. I have sent Matthew back to his dorm with frozen Sloppy Joes on many occasions, so he can have something other than cafeteria food once in a while. It defrosts and reheats in the microwave in minutes. With Andrew’s La Crosse schedule right now, it’s especially nice to have this in the freezer, so I can come home and cook a delicious, quick meal that we all like! I hope you enjoy the recipe and find it helpful for your family!
Sloppy Joes
2 lbs. ground beef, 85% lean
2 celery ribs, finely diced
2/3 cup onion, finely diced
2/3 cup green bell pepper, finely diced
1/2 cup ketchup
1/2 cup Bull’s Eye Original Barbecue Sauce
15 oz. tomato sauce
2 tablespoons light brown sugar, packed
2 teaspoons dry mustard
2 tablespoons Worcestershire sauce
2 tablespoons vinegar
salt & pepper, to taste
8 hamburger buns
1. In a large skillet, cook the beef, celery, onion, and green pepper on medium heat, until the beef is cooked through. Drain the fat.
2. Add the ketchup, barbecue sauce, tomato sauce, brown sugar, mustard, Worcestershire sauce, vinegar, salt and pepper. Mix thoroughly, cover, and simmer for 15 minutes. Place the mixture on a hamburger bun. This makes 7 - 8 Sloppy Joes.
*Cool the Sloppy Joes completely in the refrigerator before you freeze it. Freeze it in labeled freezer bags and lay it flat in your freezer so you can stack your frozen meals. You can freeze it for 3 - 6 months. I use vacuum bags as it preserves it longer in the freezer.
Jane - this looks yummy! I just went to the Key Ingedient website and this is on their homepage as one of the featured recipes!!
Those look delish! I was just thinking at the grocery store earlier that we haven't had Sloppy Joes in awhile! I think I will add them to my menu when I do my weeks worth of meals from your cookbook!
Thanks for sharing!

your recipe sounds very good I am so happy to see all the veggies
Yup, one of my all-time favorite go-to meals! I have this one marked in the book, actually ;) Sounds delish, Jane. Thanks so much for sharing it w/ t4t this week!
Janie baby, Sloppy joes are the BOMB! I make mine with pastured pork and serve it with greens, but it is also one of my FAVORITES! Your recipe looks so quick and easy! Thanks for sharing on the two for tuesday recipe blog hop. Alex@amoderatelife
I haven’t thought about sloppy joes in ages! I think it’s mostly because I only had a cast iron pan for a while, and didn’t want to cook anything tomato-y. But now that I’ve got a stainless steel pan, I can give this recipe a go! Thanks for bringing back the memories at Two for Tuesday.
We eat sloppy joes often around here - I love them! I have never added BBQ sauce to mine - I bet that gives a yummy sweetness. Thanks for linking to Two for Tues!
These look great. My son would be very happy with this for dinner.
Looks delish! I’m adding this to our menu for next week.
I found your blog through The Gooseberry Patch “What’s your favorite stove top meal?”
This is delicious! I added my homemade BBQ since it has all the same ingredients and it turned out better than I could have imagined. I had to add were the veggies, meat, salt/pepper and tomato sauce. Talk about a perfect 5 ingredient meal!
Thanks Jane!!
You’re welcome, Jenni! Glad you liked it! :)
The recipe is fantastic. I have made it several times. I have added carrots, mushrooms, fresh tomatoes, and even spinach. My family has no idea how many veggies are actually in these. Thank you!
