Have you heard about the  Holiday Sides “Make it Yours” Anolon Giveaway on Facebook?  I’m one of the 8 bloggers that are participating!  I received the Anolon Advanced 5 Quart Saute with Helper Handle (below) to test and feature a side dish recipe that I have “made my own.”  I spotted the yummy Roasted Carrots from 1-2 Simple Cooking and decided that it would be the perfect recipe to saute in my Anolon Advanced 5 Quart Saute Pan!
 
Fresh carrots are inexpensive.  I don’t know why I don’t cook them more often.  Now that I have tried this recipe, I’ll definitely put them in my side dish rotation!  I normally use olive oil when I sauté most food, but I thought I’d splurge a bit with the butter.
 
Here are the changes I made to make it my own:

  • The recipe below serves two instead of one. 
  • I sautéed them in butter, instead of roasting them in the oven with olive oil.
  • It only took 8 minutes to sauté in the pan vs roasting in the oven at 400°F for 20-25 minutes.

Sautéed Buttered Carrots

A quick and easy side dish!

Ingredients
  1. 5 carrots, peeled and sliced 1/4-inch thick
  2. 2 tablespoons butter
  3. 1/8 teaspoon dried thyme leaves
  4. salt & ground black pepper, to taste
Instructions
  1. Melt butter in large sauté pan over medium-low heat.
  2. Add carrot slices.
  3. Sprinkle with thyme, salt and pepper.
  4. Stir occasionally for 7-8 minutes.
  5. Serve immediately.

    If i made this recipe, I would add extra salt and I would add some onions to try and take away some of the sweetness of the carrots. I know most people would want to enhance the sweet taste, but I am strange and I have a problem with sweet vegetables. Thank you.

    My favorite way to cook fresh carrots is to make them honey glazed. I think a touch of honey would balance the seasonings in this recipe well.

    I think I could add garlic or a little brown sugar or cayenne.
    Although I prob wouldn’t add anything….my 3 year old loves cooked/steamed carrots and the simpler the better—she doesn’t need the extra sugar or spicy. 🙂

    I make carrots just like this only I add a little water so they steam and then I take off the lid and crank up the heat until the water evaporates and your left with buttery, creamy, herbed carrots. They are delicious. Sometimes I add in peas. I rinse the frozen peas and then add in just a minute to warm up - do not overcook or they will get gray and unappealing.

    My husband is a huge fan of thyme so I’d maybe add a few sprigs of fresh rosemary from our garden or possibly go a sweet route and add some brown sugar?

    Usually I like little sweetening to my cooked carrots, but I love the idea of adding Thyme. I don’t think I could change anything other than doubling the recipe for a family of 4 (and cooking them in my Anolon Advanced 5 Quart Saute Pan (if I win it)).
