Today’s guest post is from Loy. Her blog is called From Grandma Loy’s Kitchen!  After exchanging emails with Loy, I learned that she cooks a lot like me.  She has been preparing make-ahead meals for her family and friends for the last 40 years.  I can’t wait to share more of her recipes!  Today, she’s sharing her Salisbury Steak with “Eat Your Veggies” Gravy!

This is an easy and economical dish. There is a bit of chopping, but if it is done ahead; the dish comes together in less than 30 min. I chop and cook the vegetables a day or two ahead, and sometimes mix the ground beef and additions the night before.

The Salisbury Steak recipe is my own, and the gravy is one that I have been making since my children were small. It was a way to get a few more veggies into them. Now it works with my hubby. If one has a child (or a husband) that would resist because they saw the veggies, the gravy can be run through a blender to make the veggies “disappear.” Some sliced fresh mushrooms added to the vegetable mix is very nice if people like them. Can’t get mushrooms past my hubby unless I do the blender thing.

Thanks for sharing this recipe with us, Loy!  Please visit From Grandma Loy’s Kitchen.  You’ll find some great recipes there!

Hi Jane, I so appreciate that you shared my recipe. To be featured on your blog is very exciting for me as a new blogger. I have to say that my photos look a lot better on your blog than they do on mine. Have a great weekend.

I have not even thought about Salisbury steak since I was a kid. And I never had it homemade. Only from the good ole Encore TV dinners. This recipe looks great and totally a kid friendly meal. I bet it freezes up nice too. Which is always a bonus for me. I am kinda a freezer freak :)

    Thanks for sharing it.

I would place the cooked meat and gravy in a freezable container and cool it completely in the refrigerator. Then label and freeze.

To reheat: I would defrost it in the microwave and reheat it at 50-60% power until heated through.
