The Mormon Italian Cookbook has a nice collection of recipes! Most of the recipes are short and simple, so there’s no need to be intimidated. There are lots of mouth-watering photos and the ingredients are easily found in grocery stores.

The first thing I tried is the Italian Roast Chicken on page 82. OMG! This is the best roasted chicken I ever made! I don’t usually fill the cavity of the chicken with ingredients, but in this recipe I did, and boy, it makes a tasty difference! Not only was it flavorful, but the chicken was done to perfection! Very moist and tender! I almost made it again this week, it was that good! Did I mention that the drippings were out of this world?!
I also tried the Tortellini Salad on page 40. It was delicious and very easy to make! Dave is big on pasta, so this was right up his alley! I will definitely make this again, but I might leave out the spinach as it gets wilted so fast. Good stuff though!

This may be a bit snarky, but I’m glad to see there’s a Mormon cookbook out that’s not 80% desserts. I might have to check this one out.
