To my surprise, my son came home and said he wanted to make dinner. He made Pizza Casserole in his Life Skills class and wanted to make it for our family too. I got everything he needed at the grocery store and let him have full range in the kitchen. It didn’t take long to prepare and before you knew it, we were sitting down to a delicious dinner. Since then we have made it quite often and sometimes we add sausage, peppers, olives…anything you like, but our family favorite is pepperoni, mushrooms and provolone cheese. If you want to make this ahead of time all you have to do is boil the noodles and rinse them in cold water. Then mix everything together (cold) and put it in a baking dish, cover with foil and place it in the fridge. When you’re ready for dinner, remove from the fridge and bake.
- 1 16 ounce box of spiral pasta noodles
- 2 14 ounce jars of pizza sauce
- 8 ounces sliced pepperoni
- 4 ounces fresh mushrooms, sliced
- 8 ounces provolone cheese, shredded
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. salt
- Boil noodles according to package directions; drain & rinse.
- In a large bowl, mix together the pasta, sauce, pepperoni, mushrooms, cheese, garlic powder, onion powder and salt
- Pour into a greased casserole dish.
- Bake at 350 degrees for 20-25 minutes; remove foil.
- Sprinkle on some additional cheese and bake an additional 5 minutes.
- The picture shows a double batch because I have a large family. One batch makes a 2 quart casserole.
