Getting kids to eat vegetables is sometimes impossible. Nowadays kids just want to eat candy and junk food, but with this Orzo and Brussels Sprouts Slaw they’ll change their mind. This super simple slaw is full of veggies and your kids won’t even realize they’re eating something good for them. It’s light, but yet delicious and it’s packed with amazing flavors so it’s a healthy option for kids and adults! With all the toppings and delicious dressing, you’ll be surprised just how much the kids will enjoy eating this. So next time you’re struggling with feeding your kids veggies, make this wonderful Orzo and Brussels Sprouts Slaw!
- 4 oz. orzo
- 1/2 lb. Brussels sprouts, thinly sliced
- 1 small shallot, thinly sliced
- 1/4 cup/1 oz. dried cranberries
- 1/4 cup/1 oz. toasted chopped walnuts
- 1/4 cup/2 oz. low-fat yogurt
- 2 tbsp. extra-virgin olive oil
- 2 tsp. Dijon mustard
- 1 tsp. apple cider vinegar
- 1 tsp. honey
- 1/4 tsp. each salt and pepper
- 1 tbsp. chopped fresh chives
- Cook orzo according to package directions. Drain and set aside.
- Yogurt-Dijon Dressing: Meanwhile, whisk together yogurt, oil, mustard, vinegar, honey, salt and pepper. Stir in chives.
- In large bowl, toss together pasta, Brussels sprouts, shallot and dressing. Stir in cranberries and walnuts.
- Thinly slicing or shaving the Brussels sprouts adds a great texture to the salad. Using a food processor for this will make preparation quick and easy.
This sounds like it will be one of my favorite recipes. I love brussels sprouts & plan to make this tonight, but I only have dried cherries, so I’ll substitute them for the cranberries. Thank you for your delicious & inventive recipes. Judy
