I used the Pompeian OlivExtra Original Spray to cook some crab cakes last week.
If you want more than a quick spray, just hold down the nozzle and you can drizzle the amount desired. I like that you have that option!
The crab cakes browned nicely and the oil had a neutral taste, so there was no aftertaste to worry about.
Here’s the recipe!
- 18 oz. fresh lump crab meat, drained
- 1/3 cup mayonnaise
- 1 large egg
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon celery salt
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- 2 tablespoons scallions, thinly sliced
- 1/4 cup crushed Saltine crackers
- cooking spray or 1 tablespoon olive oil
- In a large bowl, mix all of the ingredients together (except the spray or olive oil.)
- Use 1/2 cup of the crab mixture to form a flat, round crab cake. Do not make it too thick.
- Spray a skillet with nonstick spray or add olive oil. Heat over medium-low heat.
- Brown the crab cakes for 5-6 minutes on each side. Serve hot on a hamburger bun.
- If you want to freeze the crab cakes, wrap them individually in plastic wrap and place in a large freezer bag. Freeze up to 3 months. When you are ready to cook them, defrost them completely in the microwave, then cook as directed.

We use cooking sprays daily. I love the idea of an extra virgin olive oil spray like Pompeian. I will be looking for this in Market Basket.
