I used the Pompeian OlivExtra Original Spray to cook some crab cakes last week.

If you want more than a quick spray, just hold down the nozzle and you can drizzle the amount desired.  I like that you have that option!

The crab cakes browned nicely and the oil had a neutral taste, so there was no aftertaste to worry about.

Ingredients
  1. 18 oz. fresh lump crab meat, drained
  2. 1/3 cup mayonnaise
  3. 1 large egg
  4. 1/2 teaspoon Worcestershire sauce
  5. 1/4 teaspoon celery salt
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon ground black pepper
  8. 2 tablespoons fresh parsley, chopped (optional)
  9. 2 tablespoons scallions, thinly sliced
  10. 1/4 cup crushed Saltine crackers
  11. cooking spray or 1 tablespoon olive oil
Instructions
  1. In a large bowl, mix all of the ingredients together (except the spray or olive oil.)
  2. Use 1/2 cup of the crab mixture to form a flat, round crab cake. Do not make it too thick.
  3. Spray a skillet with nonstick spray or add olive oil. Heat over medium-low heat.
  4. Brown the crab cakes for 5-6 minutes on each side. Serve hot on a hamburger bun.
Notes
  1. If you want to freeze the crab cakes, wrap them individually in plastic wrap and place in a large freezer bag. Freeze up to 3 months. When you are ready to cook them, defrost them completely in the microwave, then cook as directed.
