Our family loves meatballs, but sometimes I don’t have the time to make them right then and there. So I’ve made this meatball recipe into a make-ahead recipe that you make, par bake, freeze, and then only take out what you need. It takes some upfront time which I like to do when I’m not busy, however it saves you a ton of time for when you are. I love having these in the freezer for pasta, meatball subs, on top of pizzas, etc. You just grab a few from the freezer, toss them into sauce and in a matter of minutes you’ll have delicious meatballs!
Make-Ahead Meatballs

Ingredients
- 1 pound ground beef
- 1 pound ground veal
- 1 pound ground pork
- 2 cloves garlic, minced
- 3 eggs
- 1 cup freshly grated Romano or Parmesan cheese
- 1 1/2 tablespoons chopped Italian flat leaf parsley
- salt and pepper to taste
- 2 cups Italian bread crumbs
- 1/4 - 1/2 cup milk
Instructions
- Preheat oven to 325 degrees.
- Combine beef, veal, and pork in a large bowl.
- Add garlic, eggs, cheese, parsley, salt and pepper.
- Blend bread crumbs into meat mixture.
- Add some milk, a little at a time; mix until the meat holds together.
- Shape into meatballs.
- Arrange meatballs onto a cookie sheet.
- Place in the oven; bake for about 10 minutes.
- Remove from the oven and place the tray into the freezer for about an hour.
- Take meatballs off the tray, and place into a freezer bag.
- Place freezer bag back into the freezer for later use.
Notes
- If you'd like to cook these now, bake at 350 degrees for 35-40 minutes.
