Mornings can be hectic, however I always tell the kids to make sure they eat breakfast.  I really don’t like them filling up on sugar or carbs; I prefer something high in protein.  All four really like eggs so these Ham, Egg & Cheese Muffins are the perfect grab and go breakfast.  I’ve made them with bacon, sausage, peppers, onions…the possibilities are endless!  What I like to do is make a batch on the weekends and toss them in the freezer.  Throughout the week they can grab one or two, toss them in the microwave for about 30 seconds and breakfast is made!

Ingredients
  1. 8 eggs
  2. 1/4 C mayonnaise
  3. 1 tsp. garlic powder
  4. 1 tsp. onion powder
  5. 1/4 tsp. salt
  6. 1 C diced ham
  7. 1 C cheddar cheese
Instructions
  1. Preheat oven to 350 degrees; grease a muffin pan.
  2. Whisk together the eggs, mayonnaise, garlic powder, onion powder and salt.
  3. Fold in ham and cheese.
  4. Evenly pour the mixture into the muffin tin.
  5. Bake for 20-25 minutes.
  6. Allow to slightly cool before serving.
Notes
  1. Allow to cool completely before freezing.
