There’s a little family-owned meat market not far from my school that sells fresh chicken patties like these. I usually pick some up when I need to cook something quick for dinner and I often buy extra to freeze.
When I was on vacation this week, I had time to make my own!
You’re probably thinking…why not use ground chicken? It would be even easier. Well, I like the texture of these patties with the little chunks of chicken and this is how I get them from the meat market.
This recipe makes 5 chicken patties. Stock your freezer with them. It’s a much healthier option than the fast food drive thru!
Three chicken patties fit nicely in a quart size freezer bag.
Personally, I like to put lettuce, tomato and mayonnaise on these sandwiches. But you can add anything like cooked bacon, avocado slices, sauteed mushrooms, cheese, etc.

- 1½ lbs. chicken breast, chopped into ½-inch pieces
- 1/3 cup finely diced green bell pepper
- 2 green onions, thinly sliced (green part only)
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- 5 hamburger buns
- lettuce (optional)
- sliced tomato (optional)
- sliced cheese (optional)
- wax paper, cut into ten 5" x 6" pieces
- 2 quart-size freezer bags
- cooking spray
- Combine the chicken, green pepper, onion, salt and pepper in a large bowl.
- Spray ten wax paper pieces with cooking spray and lay out on the counter (spray side up).
- Place 1/2 cup of chicken mixture onto five pieces of wax paper. Flatten the chicken mixture with your fingers so it is evenly flat and top each chicken pattie with wax paper (sprayed side down). Keep refrigerated until ready to use.
- Heat the oven on Broil. Spray sheet pan with cooking spray. Remove the wax paper and place the chicken patties on the sheet pan. Place the sheet pan on the center rack of the oven. Broil for about 8 minutes or until lightly browned. Flip the patties over and cook for 3 - 6 minutes or until lightly browned. (The chicken is done when the juices run clear.)
- You can also cook the chicken patties on the grill about 5 minutes on each side over medium heat. (Every grill is different, so watch carefully. Remove the chicken from the grill when the juices run clear.)
- Freezing Directions
- Label the freezer bags. (Include the cooking directions on each bag).
- Place the chicken patties in freezer bags removing as much air as possible.
- Freeze up to 2 months. If you use a vacuum sealer, they can be frozen up to 9 months.
- Thaw the chicken patties in the refrigerator for 24 hours before cooking them.










How does this mixture hold together while cooking, with no binding agents?
When you cut the chicken up, it is naturally sticky. I press it down on the wax paper and shape it into a nice circle. When you peel the wax paper off, do it gently. Sometimes you just need to press some of the chicken together a little before cooking. It stays together fine when it is cooked.

Did you dice the chicken by hand? Would a food processor work? They sound so good! I’d like to make a big batch, but not sure how tedious it would be to do a lot at a time!
Yes, I used a chef knife to cut up the chicken. I haven’t used a food processor yet, but I think it would be fine to do it that way.
Is chicken fresh or i can use the frozen breasts? And u cook them then freeze the rest or ? As freezed chicken and then making them as patties then freeze them again poisones them so maybe i can cook and then refreeze? Not sure. Thank u
I use fresh chicken and I freeze the chicken patties before cooking them.
OMG just made these for my husband and I tonight!!! sooooo good!!! I actually used thighs and baked mine for 30 at 425 and they came out so flavorful and with an amazing texture.
