Oh yummy pumpkin! We love love love pumpkin in our house. I am known to be a canned pumpkin horder when I can find it. Luckily I recently stocked up and have been making yummy things with it.

And I just made this different version of Pumpkin pie, and it was very EASY and had a very LIGHT texture to it. My brother in law isn’t a fan of p. pie, but he loved this! Calls for regular milk instead of evap. And I used 1 tsp. pumpkin pie spice instead of the cinnamon called for in the recipe.
