It’s that time of year when there’s a plethora of zucchini! Most gardens are producing lots of zucchini, and if you’re like me, you’re wondering what to do with it all. I’ve made plenty of zucchini recipes, however I’m always looking for new ones. I love to bake with zucchini, have it as a side dish, or even as a meal. Zucchini is a very versatile vegetable and can actually be disguised into a lot of dishes as long as you peel the skin off.
