Okay, I clearly have a high interest in this cookbook!  Even though I’m into cooking, have a Make-Ahead cookbook, blog about food and cool products for the kitchen, and love eating at restaurants, I’m only human and don’t always have time or feel like cooking when I get home from work.  That is why I LOVE Make-Ahead Meals!  You can make these meals when you have some extra time (which is usually on the weekends for me) and enjoy them at your convenience.

You know what I love about the recipes in this book?  They’re familiar and family-friendly.  The recipe instructions are numbered with clear Freezing Instructions followed by how to Thaw and Serve.

 

Chicken Divan is comfort food to me, so I made Jessica’s Chicken Divan with Cheddar Crust on pages 124-125.  What’s cool about this recipe is that it’s made from scratch.  Don’t get me wrong, I love cream of chicken or cream of celery soup in a can, but it’s nice to make it homemade too.  In this recipe, Jessica uses her own homemade Cream of Celery Soup for Cooking, which you can find on page 223.  I made this recipe in two 8 x 8 pans.  It was perfect for me and Dave.  I cooked one right away and froze the other one.  We both enjoyed it with some garlic toast and a side salad!

There are no pictures of the recipes in this book, but don’t let that bother you.  When you stock up on frozen meals for your family, you’ll be so happy.  I have tons of sticky notes bookmarking the recipes I’m eager to make.  Give this book a try.  I highly recommend it!

    It’s not unusual to have a pan of apple dumplings and some lasagne in the freezer for a quick meal.

    I tend to freeze elements for dishes rather than meals at this time (still working on getting myself in the rhythm of freezing meals). I just froze a bunch of roasted tomatoes and pureed butternut squash.

    I really like to make and have soups all fall and winter. But my favorite thing is to make a double recipe, freeze the second in meal size portions to have on a super busy day.

    I have a lot of meals that I made ahead in my freezer for the crock pot! Mostly I make meatballs ahead of time but I also have other meals as well. I go to a lot of Wildtree Freezer Meal Workshops so I am plenty stocked!

    I don’t really make make-ahead meals, but I think it’s a great idea! I mostly just freeze leftovers on occasion, so when we have a busy night where there isn’t time to cook, I can pull the leftovers out :-)

    I recently -by recently I mean this past week- started making 1 make-ahead meal. It’s supposed to be a chicken noodle casserole but I forgot the chicken…. yeah, I’m that good. ;-) I am interested in learning more about freezer cooking and all since I am not an accomplished cook by any stretch of the imagination and everything seems take me 2 hours to make…..     frozen uncooked lasagna. We are only a family of two so I make lasagna in two smaller 8×8 pyrex dishes rather than one 13×9 and one I bake and we eat that night, and the other I stick in the freezer for a different time.

    I usually freeze unused portion of larger meals - lasagna, casseroles, etc and hope and pray that they will come out yummy the secodn time, sometimes we are lucky and sometimes not so much. WOuld love to win this book to have some actual meant to be frozen recipes to oput into rotation.

    What ends up being a make ahead meal is something that I have cooked way too much of - like soup. I don’t follow a recipe with my soup - just throw in some chicken, veggies, seasoning and maybe some noodles.

    I would like to be better at making real meals ahead. That’s why I have started following your blog.

    I like to make a bolognese meat sauce and freeze it - it can then serve my 8year old with spaghetti with the first sitting and then me and my hubby with a spicy Chilli and organic kidney beans - YUM :)

    This would be perfect for me ! I don’t currently make my own meals; I tend to buy them individually, which can be expensive. The reason for this is that I don’t have time to cook every night.
