It’s finally fall and that means school is back in session, Friday night football games, and extracurricular activities!  That also means very busy schedules and not a lot of time for dinner.  Even though we don’t always have a lot of time, I try to make a sit down dinner as many nights as possible.  When planning my menu for the week, I have to make sure I plan for dinners that have Real Flavor, Real Fast!

One of my favorite meat choices to pick up at Food Lion is Smithfield Marinated Fresh Pork.  They have tenderloins, loin filets, and sirloins.  Our favorite is the Roasted Garlic & Herb Pork Loin Filet; the pork is pre-marinated in delicious herbs and garlic that you can taste throughout the entire loin.  I’ve also picked up the Portobello Mushroom and Peppercorn & Garlic flavor before.  I prepare them in several ways; grilled, sauteed, and roasted and they always come out moist, tender, and delicious.  I love that I can just pick them up, take them home and not have to worry about trimming any fat or worry about putting them into a marinade…it’s all done for me!  This allows me to have dinner done in 30 minutes or less.

Even though it’s fall, I still have my grill out so I decided to grill the Roasted Garlic & Herb Pork Loin Filet.  The grill cooks the meat quickly while giving it a nice sear on the outside.  All that flavor is trapped inside for you to enjoy, it’s Real Flavor, Real Fast!  While the loin is on the grill, I dice up some sweet potatoes, drizzle on a little butter and add a dash of salt and brown sugar.  I place those in the oven at 400 degrees and allow them to bake while the Roasted Garlic & Herb Pork Loin Filet is on the grill.  Once the pork is done, I take it off the grill and allow it to rest before cutting.  During this time I start the snow peas.  I like to cut off the tips because I have kids, however it’s not necessary.  I toss those into a skillet with a dash of water and let them steam for a few minutes.  After that I drain the water, lightly coat with olive oil, and season with salt and pepper.

Now all I have to do is slice the Roasted Garlic & Herb Pork Loin Filet, and allow the family to enjoy!  This dinner is done within half an hour, it’s nutritious, and quite delicious.  So even though our schedules are hectic, doesn’t mean that dinnertime has to be.  Dinner is our time to sit down, talk, and reconnect with one another.  I always had sit down dinners while I was growing up, and I can still remember the many conversations that happened around the table.  Now that I’m a mom, I want that for my children as well, and with Smithfield Marinated Fresh Pork I can!

Ingredients
  1. 1 Smithfield Rosted Garlic & Herb Pork Loin Filet
  2. 2 pounds sweet potatoes, peeled & diced
  3. 2 Tbsp. butter, melted
  4. 1/4 C brown sugar
  5. 8 ounces snow peas
  6. Olive oil
  7. Salt
  8. Pepper
Instructions
  1. Preheat the grill and preheat oven to 400 degrees.
  2. Place the diced sweet potatoes into a 9 x 13" baking dish; drizzle on the melted butter and stir to evenly coat. Sprinkle on the brown sugar and a dash of salt.
  3. Place in the oven to bake; stirring occasionally. Allow these to bake until fork tender.
  4. Remove the pork from the package and place on the grill; sear on the outside and cook until you get an internal temperature of 165 degrees. Remove from the grill and allow to rest before slicing.
  5. Steam the snow peas in a skillet over medium heat for about 3-5 minutes. Remove from heat and drizzle on olive oil, salt and pepper to taste.
  6. Place everything on the table for your family to enjoy!
