Don’t throw away the leftovers, make Ham, Green Beans & Potato Soup!

Easter has passed and you may have a little or a lot of ham leftover!  I know I always buy a ham with a bone in because I love making soup with it.  Plus I make sure the ham is big enough for dinner and leftovers this way I’m one step ahead of another dinner.  The ham is already cooked so all you have to do is toss it into another recipe and one of our favorites is Ham, Green Beans and Potato Soup.  This recipe is so simple to make!  All you have to do is toss everything into a large stock pot in the morning and let it simmer all day.  Dinner will be waiting when you’re ready.  Now this may sound silly, but some of my family loves to add apple cider vinegar into their bowl while others do not.  Try it and see which you prefer!  This recipe is for a large pot, however you can always cut it in half.

Ham, Green Beans & Potato Soup

Ingredients
  1. leftover cooked ham, diced
  2. ham bone
  3. 10 pounds potatoes, peeled, cut & diced
  4. 24 ounces frozen string green beans
  5. water (or chicken stock if you don't use a ham bone)
Instructions
  1. Place the ham (and bone) into a large stock pot.
  2. Add the potatoes.
  3. Add frozen green beans.
  4. Pour enough water in until it covers the ham, green beans and potatoes.
  5. Place on the stove and bring up to a boil then reduce heat to medium/low.
  6. Simmer until potatoes are fork tender.
Notes
  1. If you don't have a ham bone you can use chicken stock instead of the water.
