Whoever invented quick breads is a genius! I love them! When I made this recipe, I added molasses to make it darker in color, the way I remember my Mom’s Date Nut Bread when I was young. It turned out nice and moist and my family and I enjoyed it with a cup of coffee! I used fresh dates (in the tub) from the produce section. Do you ever snack on fresh dates? I love them! (They have a good amount of fiber in them. Just sayin’!) This bread is mildly sweet. If you enjoy bread on the sweet side, increase the amount of brown sugar.
Date Nut Bread
Ingredients
1 cup chopped dates
1 cup boiling water
3 tablespoons butter
1/2 cup light brown sugar, packed
1 egg
1/4 cup molasses
2 cups flour
1 teaspoon baking soda
1/8 teaspoon ground cloves
1/4 teaspoon salt
1 cup chopped walnuts
Directions
1. Preheat the oven to 350°F. Spray a 9 x 5-inch loaf pan with nonstick spray.
2. Soak the dates in the boiling water for 15 minutes. Set aside.
3. In a large mixing bowl, cream the butter and brown sugar. Add the egg, molasses, and date mixture, and blend on low speed. Add the remaining ingredients and continue mixing on low speed until combined.
4. Pour the batter in the loaf pan and bake for 55-60 minutes or until a tooth pick inserted in the center comes out clean.
**Breads like this freeze well. Just be sure to wrap them well and place in a freezer bag with as much air removed as possible.

Jane — this sounds, and look oh-so yummy! I DO snack on dates - love em! Just this summer I ‘discovered’ a new recipe for using date bread. Crumble it up and mix it with Cool Whip. It was on a restaurant buffet and we asked about it because it was so wonderful. Would be a great way to use up the leftover…when it’s not quite so fresh anymore. Thanks for sharing - :yes: :
