Our family loves Creamy Bacon Corn Chowder especially when I make it with corn off the cob and lots of thick bacon.  Even in the summer I make it because we have access to some of the sweetest corn on the cob.  Plus it’s a meal that the entire family loves and it’s something I can make in the morning and enjoy throughout the day.

Having the right bacon makes this dish!  I use Wright® Brand Bacon Thicker Cut (which I buy at Walmart) because well, it’s thicker, it’s a good quality bacon and it comes in a 1.5lb package.  I love that it comes in the 1.5lb package; this way I have enough for the recipe and enough to sprinkle some on top of the chowder before serving.  For me, I know I’m getting a great value @Walmart, and who doesn’t love a great deal?  The only problem is keeping the kids from eating it while I’m making the soup.  I have to keep reminding them that I won’t have any left if they keep sneaking it from me, lol.  Once you have your bacon, grab the corn on the cob, the other ingredients and get ready to enjoy some delicious chowder!

Ingredients
  1. 1 (1.5lb) package of Wright® Brand Bacon
  2. 1 onion diced
  3. 1 clove garlic
  4. 6 small potatoes, peeled and diced into cubes
  5. 6 cobs of corn, cleaned and corn kernels sliced off
  6. 1/4 cup flour
  7. 4 cups chicken broth
  8. 2 cups water
  9. 2 cups half and half
  10. salt and pepper to taste
Instructions
  1. Slice the bacon into pieces; heat a large pot over medium heat; add the bacon and cook until crispy. Remove bacon from the pan leaving about 1/4 C of the drippings in the pan.
  2. Add the onion and cook for about five minutes.
  3. Mince the garlic; toss it in and cook an additional two minutes.
  4. Add the flour and stir until completely combined (it will be thick).
  5. Pour in the chicken broth and water, stir with a whisk until incorporated.
  6. Turn up the temperature and bring to a boil.
  7. Reduce the heat back down to medium; stir in the potatoes, corn, and cooked bacon (reserve some for the topping).
  8. Simmer for about 30 minutes, or until potatoes are fork-tender.
  9. Stir in the half and half.
  10. Add salt and pepper to desired taste.
  11. Pour into a bowl and sprinkle some Wright® Brand Bacon on top.
  12. Enjoy!
