Coconut Banana French Toast

November 28th is National French Toast Day and today I’m sharing a delicious recipe for the whole family to enjoy!  The coconut and banana go together perfectly, and the bread is actually dipped into the mixture once it is blended.  I love this technique because the bread is completely submerged with all those delicious flavors.  This is the perfect way to start the day!

Ingredients
  1. 1 banana
  2. 1 cup milk
  3. 1 cup coconut milk
  4. 1 teaspoon vanilla
  5. 1/4 teaspoon nutmeg
  6. 1/4 teaspoon cinnamon
  7. 1/2 teaspoons cornstarch
  8. 1/4 teaspoon salt
  9. 12+ slices bread
  10. 2 T Carrington Farms Coconut Oil
Instructions
  1. Heat griddle and brush with coconut oil.
  2. Blend remaining ingredients (except bread) in a blender until smooth.
  3. Pour into a shallow dish; submerge each slice in mixture and place on griddle.
  4. Cook till golden brown, then flip over to cook other side.
  5. Serve with maple syrup.
