Caramel Truffles

Last Christmas, my sister-in-law Kristy from Casual Dish made these delicious, decadent truffles from Taste of Home.  They’re rich and chocolatey!  If you’d like to make this for Christmas gifts, be sure to make this in advance as it is a little time-consuming and the truffles need a day to firm up on the inside.  I made them today and thought I’d show you!

First, add 26 caramels to a microwave-safe bowl.

Add the cream.

Add the milk chocolate chips.

Melt the caramels and chocolate (as directed) in the microwave.

Pour the chocolate in an 8 x 8-inch pan lined with plastic wrap and refrigerate for an hour.

Cut the chocolate into 30 pieces, roll into balls, and refrigerate until firm.

Melt the semi-sweet chocolate chips and shortening in a microwave-safe bowl as directed.

Dip the balls in melted chocolate and place on a large cookie sheet lined with wax paper.  I used another fork to help get the balls on the sheet pan.  If the chocolate cools off and becomes too thick when you’re dipping the balls, reheat the chocolate in the microwave on high for 10 seconds and stir.

When the truffles have cooled, chill in the refrigerator until firm.  Trim the edges around the truffles with a sharp knife and place in mini candy liners.

    This recipe is RIGHT up my alley! I love caramel and chocolate too - you make it look so easy. I love the idea to present them in the cutsie mini muffin papers too. Think I’ll have to go shopping for some caramels soon. MMM! Thanks so much for sharing.

    Chocolate is my weakness, n among the different kinds of chocolate the sound of truffles just drives me crazy..they look AWESOME!!
