With summer here we love to grill, eat outside and try new recipes. Over the holiday we tried California Coleslaw and it was quite a hit. Now this coleslaw recipe uses yogurt and mustard for the base as well as adding in some raisins. With four boys being in the house I wasn’t sure how well this would go over, but I decided to give it a try anyways. I didn’t tell them it was made differently and when they asked about the raisins I told them to at least try it. Well to my surprise, they all loved it. Once the base is mixed together and mixed with the cabbage you can’t even tell it’s yogurt! Plus the addition of the raisins added a touch of sweetness that we all enjoyed. Ingredients
- DRESSING:
- ⅓ cup plain, low-fat yogurt
- 1 tsp. Dijon mustard
- ¼ tsp. pepper
- ½ tsp. salt
- ¼ tsp. dill
- SLAW:
- 3 cups green cabbage, shredded
- ¼ cup green onions, sliced
- ½ cup carrots, shredded
- ½ cup raisins
Instructions
- Whisk together dressing ingredients.
- Toss together slaw ingredients in a large bowl.
- Toss with dressing to coat.
- Serve and enjoy!
