A quick & easy make-ahead breakfast!
I love making a nice breakfast on the weekends, but sometimes it can be a little overwhelming preparing everything so it’s all on the table at the same time. Over Easter I made an Asparagus and Ham Strata that turned out delicious! I made this the night before, tossed it in the fridge and then on Easter morning all I had to do was bake it in the oven. What I also love about this recipe is that it can actually be made and then frozen to use at a later time. This recipe uses everyday ingredients that are combined into a simple yet hearty quiche!
Asparagus & Ham Strata

Ingredients
- 5 eggs
- 2 C whole milk
- 1/2 C half-n-half
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 4 C cubed Italian or French bread
- 1 1/4 C shredded Monterey Jack cheese, divided
- 1 C cubed ham
- 1 C cut fresh asparagus
Instructions
- Whisk the first six ingredients together until blended.
- Stir in the bread, 1 C cheese, ham, and asparagus.
- Pour into a greased 8 inch square baking dish.
- Cover and refrigerate overnight.
- Preheat oven to 325 degrees.
- Remove strata from the fridge while the oven is preheating.
- Bake uncovered for 20 minutes.
- Sprinkle with remaining cheese and bake 40 - 50 minutes longer; until golden brown.
- Let stand for 5 - 10 minutes before serving.
Notes
- After assembling, cover and freeze strata. To use, partially thaw in the fridge overnight. Remove from the fridge 30 minutes prior to baking. Bake as stated above.
