300 Best Potato Recipes Cookbook Giveaway!

I LOVE potatoes!  Fried, mashed, baked, or in a casserole…it doesn’t matter!  I LOVE them all!  So for me, this is an excellent cookbook for my kitchen!  You know what’s cool about this cookbook?  It includes Breads, Biscuits, Scones, Griddle Cakes, Desserts & Confections!  I bet you thought that it’s just full of side dishes!  That’s what I thought before I went through it!  You can find Soup, Salads, Appetizers, Snacks, Light Meals, Main Courses, Vegetarian Dishes, and of course plenty of Side Dishes! There are only 16 full-color photos in the book, but the variety of recipes certainly makes up for that.  Check out a few photos from the book!

The Nacho Wedge

Makes 6 to 8 servings

I’m here to tell you to forget corn chips when making nachos. Use much healthier crisp, oven-roasted potato wedges and top with all the usual nacho suspects - chiles, beans, cheese, olives, green onions, diced tomato. This is a great dish to serve at your next big televised game day. Add salsa, guacamole and perhaps even a dollop of sour cream, just to round things off.

Preheat oven to 400°F (200°C)

Ingredients

6 large floury potatoes, scrubbed

1⁄4 cup olive oil 60 mL

2 tsp sweet paprika 10 mL

1⁄2 tsp garlic salt 2 mL

1⁄2 tsp dried oregano 2 mL

1⁄4 tsp cayenne pepper 1 mL

Freshly ground black pepper

2 cups shredded Monterey Jack cheese 500 mL

1⁄2 cup cooked black beans, drained and rinsed 125 mL

3 tomatoes, diced

3 green onions, chopped

1⁄2 cup sliced black olives 125 mL

1 jalapeño pepper, thinly sliced, or 1⁄4 cup (60 mL) canned sliced jalapeño peppers  

Directions

1.   Halve potatoes lengthwise, then cut into thick wedges of uniform thickness. Transfer to a bowl. Add oil, paprika, garlic salt, oregano, cayenne and freshly ground pepper to taste and toss until potatoes are well coated.

2.   Transfer potatoes to baking sheets, lining them up nicely (do not let them touch). Bake in preheated oven, turning once or twice, for about 30 minutes or until golden brown and cooked through.

3.   Top potatoes with half the cheese, then beans, tomatoes, green onions, olives and remaining cheese. Return to oven and bake for about 5 minutes or until cheese has melted (broil if necessary).

Serve immediately (see Tips, left).  

Tips If you have a favorite spice blend that you use for chicken or ribs, use it to season the potatoes before roasting. For this quantity of beans, it’s probably easiest to use canned black beans, unless you have cooked dried ones from scratch and have some leftover. Plan on serving these spuds directly from the baking tray, but let everyone know how hot it is.

I made the O’Brien Home Fries on page 242.  They were delicious and easy to make!

 

I also made the Real English Chips on page 64.  You may have seen them on my previous deep fryer giveaway.  This was the first time I ever made deep-fried french fries!  They were just like the ones you get in the Pub!  Very tasty!

 

Interesting Feature in the Book

There is a Potato Glossary in the front of the book that is divided into 3 sections:  All-Purpose Potatoes, Floury Potatoes, Waxy Potatoes, and Specialty Potatoes.  Each section has a list of potatoes and tells of its origin, availability (country), description, and uses.  It’s pretty interesting!

    I’ve never met a potato I didn’t like! If I have to pick a favorite it would be my mom’s fried potatoes and onions. She gets just the right crispness on them on the outside and they are so tender and moist on the inside.

    My husband loves potatoes but his favorite is still a baked potato with lots of butter. When we dine out, he will order every kind of potato on the menu to have with his dinner!!! I so need this book because I get tired of trying new potato recipes. I often can’t even eat potatoes because I am so sick of cooking them.

    I too love potatoes almost anyway you can cook them. I even like them raw. One of my favorite ways with potatoes and my families too is Colcannon - Mashed potatoes, cabbage, green onions, ham, lots of butter and my son sometimes even puts Irish cheese in his.

    My favorite potato dish is one my family makes every year for the holidays. Its called make ahead potatoes. Its really easy to make, you can make it a day ahead of big holidays to make it easier on the day itself. It is basically a bunch of mashed potatoes, that you add a bunch of cream cheese and butter too. So simple, but its so rich and creamy, after you mix it all together in the mixer. It a great compliment to the holiday table, and always a big hit.
