Have you ever had Panera’s Creamy Tomato Soup? It’s my latest obsession. I have scouted the internet for a copy cat recipe and have tried reproducing it many times over the past few months. Just ask my husband Dave. He’s been my guinea pig! Most of the recipes that I have found on the internet have too much cream and don’t really taste like Panera’s. (No offense!) The recipe that I came up with, is pretty darn close to Panera’s and I didn’t have to use any cream. Just good ol’ whole milk.
I tried using a can of pureed tomatoes to cut down on the work, but found myself coming back to this can and pureeing it myself because the texture and taste was so much better.

Tomato Soup
Ingredients
- 1 can (28 oz.) “Kitchen Ready” ground peeled tomatoes
- 1/2 tablespoon olive oil
- 1 shallot, finely diced
- 1/2 teaspoon salt
- 1/8 to 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried basil
- 2 to 3 teaspoons sugar
- 3/4 - 1 cup whole milk
Directions
1. In a medium sauce pan, heat the oil over medium-low heat. Add the shallot and stir occasionally until it starts to brown. Add the cooked onions and can of tomatoes to the blender and puree for about 8 seconds.
2. Add the blended tomatoes, salt, pepper, basil, and sugar to the sauce pan. Stir until combined.
3. Simmer on medium-low heat for 30 minutes; stirring occasionally. Make sure it bubbles slightly during the whole 30 minutes.
4. Warm the milk in the microwave for 1 minute on high. Remove the soup from the heat. Add the milk to the soup very slowly and stir constantly until it is all added. Return to low heat for 2 minutes and serve hot. If the soup is too thick for you, add more milk 1 tablespoon at a time to your liking.

I’m not a big fan of Panera, but I’m big on tomato soup and grilled cheese, especially on a rainy day like today! I’ve never made it from scratch - but this looks pretty simple and delish!

I love tomato soup and grilled cheese! Yum. I have made tomato soup once, it turned out pretty good. But now the only soup I buy from Campbells (except cream of mushroom) to eat is Tomato Soup. Everything is too salty.

I love Tomato Soup and yours looks delicious! I was looking for a recipe too! I wonder how this would taste with (dare I say it) skim milk? It would be a good Weight Watcher recipe….I just joined online!
