When I was younger I wasn’t that fond of beans, however now I love them!  Not only do they taste delicious, they are extremely healthy for you.  When you pair them with a high quality olive oil you have a scrumptious dish that provides so many health benefits for you.  This Three Bean Salad is the perfect example…take a look!

Ingredients
  1. 1 small red onion
  2. 1 8-ounce package fresh frozen green beans, thawed
  3. 1 15-ounce can garbanzo beans, drained
  4. 1 15-ounce can kidney beans, drained
  5. 2 tablespoons finely chopped fresh mint
  6. 2 teaspoons finely grated lemon zest
  7. 1/4 cup sherry vinegar
  8. 1/4 cup of Gaea's Kalamata D.O.P. Greek Extra Virgin Olive Oil
  9. 1 tablespoon sugar
  10. 1 teaspoon kosher salt
  11. 1/4 teaspoon freshly ground pepper
Instructions
  1. Peel and quarter the red onion and slice it very thinly.
  2. Place the onion slices in a large bowl, and add all other ingredients.
  3. Stir and taste to see if you'd like more lemon zest or mint.
  4. Serve immediately or refrigerate until ready to serve.
