Creole, Cajun and Soul Food from New Orleans’s Famous Neighborhood of Jazz

My son Matthew had the pleasure of going to Mardi Gras a few years ago. He traveled all over the world with Semester at Sea, but he said that New Orleans had the best food he ever tasted. When I had the opportunity to review this cookbook, I immediately thought of him and was excited to try some authentic Creole and Cajun food from the south. Matthew can’t wait to get his hands on this cookbook!
I’ve never been to Louisiana, so I’m a little green when it comes to New Orleans cuisine. Author, Todd-Michael St. Pierre explains this cuisine in his book, “while many people think of Creole- and Cajun-style food as being very hot, spicy, and blackened, it’s not necessarily so. New Orleans cuisine is much more concerned with achieving the perfect seasonings and spice combination in each dish. “Spice” doesn’t always equate to “hot”; down here, it usually refers to “flavor!” With that said, I’m really excited to make so many recipes from this book because I love a lot of flavor, but just a hint of heat.

I made the Pride of the Parish Crabmeat Au Gratin (on page 115) over the weekend. I didn’t have a chance to take a lot of photos of it because I brought it to a party. Those of us who like crabmeat thought it was great! The crabmeat flavor really shined through. It called for 1 lb. of shredded cheddar cheese on top, but I used half the amount. Next time I make it, I’ll use even less cheese as the crabmeat mixture was the best part!
There are many beautiful, colored photos in this book and the recipes are easy to read. If you’re looking for authentic Creole and Canjun recipes, you’re sure to love this book!

Well I burn a lot of stuff so I like to call it Cajun so I’d have to say, “Yes I am a fan of New Orleans cooking!” LOL

LOVE the Nawlin’s food! We were there right before Katrina took it all out and one thing we did was go to an afternoon cooking school. DELISH! I’ve always been a BIG fan of jambalaya… and pralines of course. :)
My hubby and I just visited New Orleans not long ago and I’m already craving some dishes that we tried there. But I don’t know how to cook them so this book would comes in handy! I definitely wanna learn how to make the Desirée’s Chicken and Andouille Gumbo, and the Lafitte Corridor Chicken and Dumplings sounds just as wonderful!
Crawfish etouffe and crab and corn bisque are two of my favorites.

I love cajun food but have never tried cooking cajun food. This cookbook would be great to get those recipes and try some for myself.

I love New Orleans Cuisine! I am from South Louisiana. Whenever I go to New Orleans~I love the Gumbo & PoBoys!! I cook Gumbo myself often & Crawfish~~OMG boiled is the best! Would love to try any & all of the recipes in this book!
