Pizza is one of our favorite dishes, and we pretty much eat it every week! I’m always looking for new recipes and I love to create my own as well. This Sweet Smoky Chicken and Vegetable Grilled Pizza is my latest creation and it’s part of the Budweiser Sauces & Marinades Recipe Challenge! I decided to use one of the Budweiser Sauces as my base, a layer of cheeses, then a variety of vegetables, chicken and spices. I grilled it to perfection, and it’s one of the best pizzas I’ve made.
- 1 10-12" Ready-to-Bake Thin Pizza Crust
- 1/3 C Sweet and Smoky Budweiser Barbecue Sauce
- 1 C corn
- 1 Roma tomato, seeded and diced
- 2 Tbsp. red onion, diced
- 1 C black beans
- 3/4 C chicken, cooked and shredded
- 1/4 tsp. cumin
- 1/8 tsp. salt
- 1 C Gouda Cheese, shredded
- 1/2 C mozzarella cheese, shredded
- 2 Tbsp. fresh cilantro, torn into pieces
- Heat the grill.
- Mix the corn, tomato, onion, beans, chicken, cumin and salt together; set aside.
- Spread the sauce onto the crust.
- Sprinkle the cheeses onto the sauce so it's evenly covered.
- Spoon the vegetable/chicken mixture evenly on top of the cheese.
- Place pizza onto heated grill and cook for 5-7 minutes; until cheese is melted.
- Remove pizza and sprinkle on the cilantro.
- Slice, serve and enjoy!
