Soft Raisin Cookie Bars with Pete and Gerry’s Organic Eggs + giveaway

Cooking is one of my favorite things to do!  I can spend hours in the kitchen and not mind at all.  When I cook, I make sure I buy quality ingredients so my recipes will turn out delicious.  One product I like to have in the fridge is Pete and Gerry’s Organic Eggs.  I know some may think eggs, are eggs, but I have to disagree.

Pete and Gerry’s Organic Eggs has been in business for generations, sourcing eggs from small family farms, and they became they country’s first Certified Humane Free Range egg producer.  All the eggs are produced without antibiotics, hormones, pesticides, GMOs or animal byproducts. 

Look at the difference between the eggs:  on the left is a grade A large egg and on the right is a large Pete and Gerry’s Organic Egg.  Not only are they different in size, the color of the yolks are too.  These eggs are the best tasting and safest to eat.  I love that they come from farms, and not a factory!  The hens have a safe, comfortable place to live a happy, healthy life with access to grass, dirt, and the space for them to engage in natural behaviors.

Here is one of my favorite recipes to make; Soft Raisin Cookie Bars.  These start off by making a delicious and thick raisin filling.  You take some raisins, add a little water, brown sugar, and cornstarch; allow that to cook until it thickens up.  Set aside to cool.

For the dough you cream together the shortening, margarine, and brown sugar.  Then add in the Pete and Gerry’s Organic Eggs and mix until incorporated.  Add in the baking soda, flour, and vanilla and mix again.

You take half of the dough and place it into a baking sheet that is lined with saran wrap; remove from pan and set aside.  Take the remaining dough and pat it into the baking sheet. 

Now take all that delicious raisin filling and cover the dough. 

Take the dough with the saran wrap and carefully flip it onto the raisins.

Place in the oven to bake for 25-30 minutes, remove, and allow to cool.

Cut them into bars and enjoy!

Dough
  1. 1/2 C shortening
  2. 1/2 C margarine
  3. 2 C brown sugar
  4. 2 eggs
  5. 3 3/4 C flour
  6. 1 tsp. baking soda
  7. 1 tsp. vanilla
Filling
  1. 1 large box of raisins
  2. 1 Tbsp. cornstarch
  3. 3/4 C brown sugar
  4. 1/2 C water
Instructions
  1. Preheat oven to 350 degrees.
  2. Place raisins, cornstarch, brown sugar and water into a small saucepan.
  3. Simmer over medium heat until thickened. Turn off heat; allow to cool.
  4. Cream shortening, margarine and brown sugar together.
  5. Add eggs and mix until incorporated.
  6. Add flour, baking soda and vanilla. Mix until completely combined.
  7. Cover the bottom of a cookie sheet with saran wrap. Press half of the dough onto the cookie sheet, covering it completely.
  8. Using the saran wrap, remove dough, set aside and press the remaining dough onto the ungreased cookie sheet.
  9. Cover dough with raisins.
  10. Flip first layer of dough on top of raisins; covering evenly.
  11. Bake in preheated oven for 25-30 minutes or until golden brown.
  12. Slice, serve and enjoy!

    How many ounces in the large box of raisins. What would ground up raisins do to the recipe?

      Jeri, it’s about 12 ounces. As far as grinding up the raisins, I’m sure it would work, but the consistency would be mushier so I wonder if they would meld into the dough.
