Sausage Vegetable Medley

My family loves sausages. There is a pizza restaurant nearby that makes the best homemade sausages. Once in a while, I’ll buy 3 - 4 pounds of fresh homemade sausages from them and freeze some of it to make this recipe or I’ll add the sausages to my spaghetti sauce. I used turkey sausages this time as I need to get back to some healthier eating after the holidays.

Sausage Vegetable Medley

2 lbs. sweet Italian turkey sausages
5 potatoes, chopped
1 large onion, sliced
2 green peppers, sliced
2 - 3 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
salt & pepper, to taste

1. Preheat the oven to 350 degrees F.

2. Cut the sausages in half and place them in a large baking dish. Cut up the vegetables and add them to the baking dish. Drizzle the olive oil over everything. Season with garlic powder, Italian seasoning, salt and pepper. Mix well.

3. Bake for 1 hour uncovered, turning occasionally

Serves 4

Cut up the onion and green peppers. Store them in a covered container in the refrigerator. Cut the sausages in half, store them in a covered container, and refrigerate.

It doesn’t sound like much, but it will save you time and dirty dishes when dinner time comes around the next day!

    I just stumbled onto your blog recently and love it. You can actually peel and cut potatoes the day before as well and cover with cold water in a sealed container in the fridge. They won't turn on you! I do this a lot for prep on holidays when I'm stuck making tons of mashed potatoes!!! This looks yummy
