When I became a member of Rouxbe Cooking School, Chicken Parmigiana was on my list of recipes to try from their site. I have my own version of this recipe in my cookbook and I love to make it whenever I have a pot of spaghetti sauce. A few weeks ago, I tried this recipe and was very happy with the way it came out! I thought it was interesting that Rouxbe uses grapeseed oil for frying the chicken (which I’ve never used before). I had a bottle of roasted garlic grapeseed oil on hand that was given to me as a gift, so I was happy to give it a try. I was very happy with the oil! The chicken browned nicely and tasted great!
