Potato Pancakes


When I was growing up, we use to enjoy potato pancakes on our winter vacations and on snowy days when school was cancelled. My sisters and I would take turns grating potatoes by hand so it wouldn’t be a lot of work for my mom. The process is much easier today with the help of a food processor. The trick is…you need to run the food processor for a long time so the potatoes are smooth and mushy (with no lumps). Most of us enjoy these pancakes with ketchup. Other people prefer to spread butter on top. How about you? Are there any potato pancake fans out there?

Potato Pancakes

6 medium potatoes
1 large egg
1/4 cup flour
1/8 teaspoon salt
shortening

1. Peel the potatoes, cut them into thick slices, and add them to the food processor. Process until smooth (no lumps). Pour the potatoes into a large bowl. (If you don’t have a food processor, finely grate the potatoes in a large bowl.)

2. Add the egg, flour, and salt and mix well.

3. Heat a large skillet over medium heat. Add 2 tablespoons of shortening. When the pan is just starting to smoke, add the potato batter (as shown) making 2 pancakes at a time. When the edges are nice and crispy, flip them carefully and brown on the other side. Add more shortening before you make another set of pancakes. This recipes makes about 11 pancakes. Serve immediately or keep them warm in a 200 degree F oven until the rest of the pancakes are cooked.

    We always made these from left over masehd potatoes- it seems easier than this. But these do look pretty good. I'll have to try them!

    I love potatoe pancakes, to be honest I love anything that has to do with potatoes. I buy Cohens Potatoe Knishes, but would love to learn how to make them so the skin is like theirs. I like applesauce or sour cream on mine. Thanks for the recipe, I'll try it this week.

    We make them from leftover mashed potatoes and serve them with applesauce, butter, or sourcream.

    This recipe would have come in so handy a few weeks ago. I was so busy that I wasn't thinking while making mashed pototoes and threw my potatoes into the food processor before boiling. I just threw them out, not knowing what to do with the blended, uncooked batter. I'll have to give this a try. :)

    I love potato pancakes. Had them from time to time as a kid and make them once in a while now when I have time. They are great with sour cream and apple sauce. Could make a meal out of them.

    Instead of shortening, could you use anything else? Butter? Oil?

    You can use canola or veg. oil. I just find that it doesn't stick as much with the shortening.

    I LOVE potato pancakes. I make them with regular Idaho potatoes, sweet potatoes, etc. I top them with either blue agave syrup or creme fraiche and applesauce! Yum

    I think this is one of the healthiest vegetables. It always helps satisfies my hunger and doesn’t have much calories versus the amount.

    We always do this with leftover mashed potatoes! just add a little flour to make them thicker and put them on a skillet like pancakes! They are the best!
