Could this cookbook be any more up my alley?!  H-E-L-L-O!  I LOVE meals that you can make ahead!  Authors Mimi Wilson and Mary Beth Lagerborg are back with another great cookbook Once-A-Month Cooking Family Favorites!  Check out their video!


Once-A-Month Cooking Family Favorites is divided into Two-Week or One-Month Cooking Cycles, but you can make as many meals as you want when you have time.  (That’s what I do!)  For each cycle, they include a handy menu chart, pantry list, shopping list, assembly order, and recipes.  You can’t ask for more than that!

I’d like to share some pictures of my favorite recipe (so far) from this cookbook!  This is Hamburger Quiche.

First of all, I love that it makes 2 pies.  You could cook one and freeze the other or stock pile them in your freezer.  Your choice!

My husband and I loved it!  You know it’s a keeper when Dave wants to save some for his lunch the next day!

You know I’m going to give this book two thumbs up!  The recipes are easy, delicious, and save you money!  In these tough economic times, we all need to save where ever we can.  But the other great thing about Once-A-Month-Cooking, that it is so satisfying, is coming home from work and having the meal already made!  Some meals need to thaw overnight and some can go straight into the oven.  All it takes is a little planning!

    I’ve only made freezer meals at Dinner by Design. The recipes were never favorites of my family.
    Would love these cookbooks!

    This cookbook looks awesome. I would sure love it!

    I always freeze an extra lasagne casserole and also meatloaves. I also buy French Bread loaves when they are marked down to half-price and make garlic bread out of it for the freezer. Just slice it up and slather on garlic butter. Then either freeze individual pieces on a cook sheet and then pop back into plastic when frozen or just freeze the whole loaf at once.

    Mini meatloaf!
    I make it with stuffing instead of bread crumbs then freeze it in muffin tins. Three lbs. makes about 16 mini loaves. Fill them, cover with plastic, freeze for at least 4 hours. Pop them out and put in ziptop bags. Cook at 30-40 minutes on a cookie sheet or casserole pan. Top with catsup or bbq sauce the last 5-10 minutes.

    I also make spaghetti pie ahead. It’s from the Rochester Jr. League cookbook, Applehood and Mother Pie. Line a 9″ or deep dish pie pan with foil and then plastic wrap.

    Cook 6 oz of spaghetti cooked, drain and toss in 2 Tbs butter and 2 beaten eggs. Press into pie pan. Spread with 1-1/2 cups of ricotta or cottage cheese. Cook 1 lb. ground beef or turkey, mix in chopped onion, and italian seasonings, (Or, if you are a good make ahead cook, you have some already cooked in a ziptop in the freezer) Drain and add an 8oz can of tomatoes and a 6oz can of tomato paste. Cover with plastic and foil and freeze with 1 cup of shredded mozzarella in a separate ziptop bag. When it’s frozen, pop out of the pan and put back in freezer.

    When ready to cook, pull out to thaw the night before, unwrap and put in pie pan then in the frig to thaw. Cook uncovered at 350 for 20 minutes. Sprinkle on mozzarella and bake until bubbly. Let it sit for a minute to set.

    Well I have some frozen Lasagna in the freezer right now and I’m not sure they count as a meal but I’ve also frozen upside-down caramel rolls. I make those for Christmas morning breakfast, so yummy.

    I have a three bean stew that I usually freeze and of course my pureed baby food. My 11 month old however does not want baby food and wants to eat what mommy eats. I would love a new cookbook that can help this busy momma with making good food.

    I’m just starting to learn how to freeze whole meals. The only thing I’ve done before is pureed my pumpkins from Halloween and frozen the puree to use later for pumpkin pie. I’d really love to have this cookbook so I can learn how to really do freezer meals!

    This cookbook looks like a great way to rotate my frozen meals with some NEW ones! I usually freeze chicken enchiladas, lasagna, red enchiladas with beef and beans, meatballs, breakfast casserole and stuffed shells. I know there are so many others to do I just get stuck in my rut.

    I’ve doubled some recipes like lasagna and baked ziti and frozen them. The easiest one I’ve done is home made calzones. Those are great because we can just pull out the amount we want at that meal.

    I haven’t done many freezer meals, but we do have a recipe for mini meatloaves that we really like…
    And, I’d really like to start planning my meals ahead of time… maybe this would help me! :)

    I do a lot of make-ahead meals. Not only for my husband for his lunches but for a senior that lives in my building. I’m sure they are both getting sick and fed up of the few recipes i make over and over again :)

    Mac n Cheese
    Tofu Sausage with Peppers & Penne
    Cottage Pie
    Beef Stew

    DH and I are house hunting and one of the things I’m most looking forward to is getting a deep freeze so I can do more OAMC.

    I freeze all sorts of things….chili, homemade hot pockets, chicken noodle soup. I am always looking for good freezer recipes and instructions.

    I loved to put together lots of make ahead meals when my children were @ home. Now that I’m retiring I’m going to start freezing loads of make ahead meals. One of our favorite frozen meals included mashed potatoes, casseroles of every kind and enchiladas. I’m sure there are many more that I haven’t tried, but am looking forward to doing at least a month’s worth at a time!!

    Occasionally, when I make something that you just can’t half well (like lasagna), I get it all ready, then stick 1/2 in the freezer for later. That way we don’t eat leftovers for a week, and it’s fast to make next time. But I’ve heard of this kind of idea before, and I’ve always wanted to try it.

    I freeze any number of meals, soup, stew, turkey dinners, meatloaf dinners. But always cooked as I use this method for quick meals.
