My Version of Panera’s Strawberry Poppy Seed and Chicken Salad

Have you ever tried the Strawberry Poppy Seed and Chicken Salad at Panera Bread? They only offer it in the summer. It’s perfect for these hot, humid days. Panera gives you a tasty fat-free poppy seed dressing to go with it. I used this dressing and it was great!

 

 

 

My Version of Panera’s Strawberry Poppy Seed and Chicken Salad

This recipe will feed 2 people if this is all you’re eating. If you make this as a side dish, it will feed 3 - 4 people.

Ingredients

1 head of romaine lettuce, chopped
3/4 to 1 cup grilled chicken, chopped (You can also use Perdue Short Cuts or Rotisserie chicken)
4 oz. pineapple tidbits, drained
1/2 to 3/4 cup strawberries, sliced
1/4 cup toasted pecans or walnuts
10 - 12 mandarin orange segments (optional)
1/4 to 1/3 cup fresh blueberries

Directions

Add all of the ingredients to a serving bowl. Drizzle the salad with Poppy Seed Sweet & Sour Dressing.
