What are you doing this weekend?  Are you going to grill, swim, eat, rest, exercise, or entertain?  (Did I miss anything?)  With Matthew still on Long Island for the summer and Andrew at the age where hanging out with his parents is not cool, it’s going to be a fairly quiet weekend for us.  We have invited my parents and sister to come over on Sunday for some delicious Baby Back Ribs.  In case you missed my Baby Back Ribs last year, click on the link for the recipe.  They are fall-off-the-bone GOOD!

Actually, I’m making the same thing that I made last Memorial Day because we enjoyed it so much.  Here are the Boston Baked Beans that I’m going to make again.  They’re made in the crock pot so there’s no stress with this dish.  The hardest part of this recipe is remembering to soak the beans for 12 - 15 hours!

I’ll be making my favorite Pasta Salad recipe this weekend.  I love the pickle and mayo combination!  This recipe tastes even better the 2nd day so it will be nice to make this a day ahead and know that part of my meal is already finished!

For dessert (on Sunday) I’m thinking of making some ice cream with my new ice cream maker! On Monday, we’re going to my brother-in-law’s house on the lake about 10 minutes away.  I’m going to try out a new pie recipe that day.  Hopefully, I can share the recipe and some nice tranquil lake pictures with ya next week!  Have a great weekend!

    Jane, your menu looks wonderful! What time should we be there? lol!

    We are actually going to Gisele’s house later this afternoon. First, we are going on a family bike ride on the bike path in Ayer, MA and then we will help her open up her pool and enjoy some hamburgers and hot dogs on the grill!

    I’m having a strawberry and chicken salad for lunch today. Got a bag of mixed greens, some strawberries, a cut-up chicken breast, and pecans. A little sprinkle of Ken’s Steakhouse Sweet Vidalia Onion Dressing and it’s good to go! A perfect summer lunch.
