This week I am sharing two recipes. One is a vegan soup: French Lentil, Butternut Squash and Kale. The other is an easy enchilada recipe: Chicken, Black Bean, and Delicata Squash Enchiladas with a Homemade Enchilada Sauce (gluten and dairy free).

Today I am sharing two of my favorite appetizers…my friends’ favorites too - Hot Artichoke Dip with Green Chiles and an Apricot Gorgonzola Cheese Spread that has bacon, green onion and cream cheese - it’s an awesome combination of flavors!
