I love chicken salad sandwiches! How about you? With the hot days ahead, sandwiches like this are quick and satisfying.
Chicken Salad
Ingredients
3 cups chicken, cooked and chopped (or use the meat from 1 rotisserie chicken)
1/2 cup seedless grapes, halved
1/4 cup sliced almonds
1/4 cup mayonnaise
salt & pepper, if desired
bread of your choice
Directions
Combine all of the ingredients in a large bowl, cover, and refrigerate. Makes 4 - 5 sandwiches.
