Summer is almost here and one of my favorite places to go are farmer’s markets! We live in a very rural area so there are many that offer lots of fresh fruits and veggies. We went to one last year that even offered “unicorn” beef jerky, which was a real treat for the kids because it had crystallized sugar and salt on it so it sparkled! I love picking up all kinds of veggies, bringing them home, do some canning, make a few sauces and then make menus that incorporate as many veggies that I can. The other day I picked up beautiful cabbage, kale and onions and made this delicious recipe.
We go through a lot of homemade sauce and normally run out before the new season starts. So even though I do make homemade sauces I like to keep some store bought sauces on hand too. I like to look for ones that offer fresh from the farm vegetables and while shopping at Walmart the other day I noticed a new product; Prego® Farmers’ Market sauces. They come in Classic Marinara, Tomato & Basil, and Roasted Garlic. These use ingredients you’d find at your local farmers’ market such as vine-ripened tomatoes, garlic and basil which all are picked at the peak of freshness and made the way you would!
Once we got home I got the ingredients together and got busy cooking. I first cut up the bacon and sauteed that until brown and crispy. Once it was done I removed the bacon from the pan and left the drippings remain.
After that I tossed in the chopped cabbage, kale and onion.
I sauteed that until it wilted down to about half it’s size, and then added the bacon back in.
Stir that all up and then add the Prego® Farmers’ Market Sauce. Any of the flavors would taste divine in this!
Stir until it’s all combined and then cover it with a lid and let it simmer for awhile. The longer it sits, the more intense the flavors get.
While it’s simmering, boil off the noodles according to the package directions, rinse in cold water and then toss into your sauce.
This is a meal in it’s self being that you have the meat, the veggies and the pasta all in one dish. All you have to do is serve this with a nice glass of red wine, and enjoy!
- 1 head of cabbage, chopped
- 2 C chopped kale
- 1 medium onion, diced
- 1 (12 ounce) package bacon
- 1 tsp. garlic powder
- salt and pepper
- 1 (12 ounce) box of noodles
- 1 jar of Prego® Farmers' Market sauce
- Cook the bacon over medium heat until brown and crispy.
- Remove bacon from the pan, set aside and leave the bacon drippings in the pan.
- Add the chopped cabbage, kale and onions to the pan.
- Cook until it's wilted to about half it's size; around 10 minutes.
- Add in the Prego® Farmers' Market sauce and stir until combined. Cover with a lid and let it simmer.
- Boil off the noodles according to the package directions, rinse in cold water and then add into the sauce.
- Stir in the garlic powder, salt and pepper.
- Serve and enjoy!
