Once in a while, I bump into someone at a summer gathering who doesn’t like cold salads with mayonnaise in them. So I thought I’d share a great “mayonnaise-free” salad that we love, that lasts for several days in the fridge. If you like Italian sub sandwiches, you’ll love this. You can vary the recipe by adding such ingredients as sliced pepperoni, salami, or mortadella.

LAND O LAKES® 4 Cheese Italian Blend has a flavorful mixture of Asiago, Romano, Parmesan, and American cheese.
I requested a few thick slices at the deli so I could cut it into bite-size cubes.
This salad is delicious and easy to throw together.

Italian Pasta Salad
From: Make Ahead Meals for Busy Moms
Ingredients
1 lb. Pasta Ruffles, cooked, drained, and cooled
1 ½ cups (cubed) LAND O LAKES® 4 Cheese Italian Blend
1 ¼ cups (cubed) thick deli ham
1 small green bell pepper, diced
1/3 to 1/2 cup (diced) dill pickles
1 package of grape tomatoes
(optional) small onion, diced
salt & pepper, to taste
Dressing
½ cup vegetable oil
3 tablespoons red wine vinegar
Directions
1. Combine the first 8 ingredients in a large bowl.
2. In a small bowl, mix the vegetable oil and red wine vinegar together and drizzle over the salad. Mix the salad thoroughly.
3. Cover and keep refrigerated.
Serves: 8
