I must sound like a broken record but I just love Italian food! Some day I’ve got to get to Italy and experience their food first hand. Until then, I’m happy to have Italian Cooking at Home with The Culinary Institute of America to help me in the kitchen!
There are some amazing photos in this book and the majority of the recipes are not very long. I’m not a wine connoisseur, so I love that each recipe in this book is followed by a few recommended red or white wines that would go well with the recipe. Also, the first chapter, The Foods and Wines of Italy, reviews some of the famous foods of various regions in Italy and the wines that help make each meal into a feast.

Here are two recipes I made from the book.
Anelli di ricotta e spinaci
(Rings of Ricotta and Spinach)
I made crepes and filled them with ricotta, spinach, butter, a minced shallot, grated Parmesan cheese, and an egg. Then I cut them into small pieces and topped them with more butter and Parmesan cheese. Very tasty!
Spaghetti cacio e pepe
(Spaghetti with Pecorino Romano and Fresh Cracked Pepper)
Talk about easy! This was a great side dish!
If you’re looking for a good variety of risotto, Gnocchi, and ravioli dishes, this cookbook is for you! I’m planning to make some homemade pasta recipes from this book this summer when I’m on my summer vacation, along with many other recipes that I have bookmarked!

My favorite Italian dish to make, when I have the time, is fresh ravioli. My grandmother taught me how to cook italian when I was quite young and I have slowly been teaching my kids (young adults now)

I absolutely looooooove noqui (gnocchi) with the chicken sauce that I grew up with!!! And once I even made the noqui from scratch. I had 6 cookie sheets of them. Fortunately it was winter and I could leave them outside to freeze! :) Oh so yummy though!!!

I love to make lasagna but what I would really like to learn to make is Italian Wedding soup. When I lived back East I used to get it all the time. I buy it canned occasionally, and it is soooo not the same.
