In a house full of guys, the kitchen has always been my domain. My husband has always helped with grilling outdoors and simple meals in the kitchen, but never really got into cooking. My boys haven’t cooked with me since they were about 5 years old. It just wasn’t their thing.
Well, in the last few years, my college son Matthew (above) has done a lot of experimenting in his kitchen and has made some awesome meals with his girlfriend. So guess what? While Matthew was home for Christmas, he offered to make one of his favorite meals for us! Last night he made 2 recipes that he got from Epicurious.com.
Roast Chicken with Pancetta and Olives
I was out doing errands while he was cooking dinner and when I walked in the house, I was blown away by the delicious smell! If you check out the recipe, I should tell you that Matthew didn’t use any wine or olives. But it was so G-O-O-D! I will definitely make this again.
Mashed Potatoes with Prosciutto and Parmesan Cheese
This was a great change from boring ol’ mashed potatoes! Lots of flavor! It went perfectly with the chicken! I could definitely get use to someone else cooking for the family once in a while. As much as I love cooking, I would love it if someone else planned and cooked a few meals here and there. Ya know what I mean?
